Paleo Vanilla Coconut Cookies

These simple Paleo Vanilla Coconut Cookies are so easy to make, and really hit the spot when you are looking for a sweet snack that is also garbage free. These little homemade cookies are both gluten free and dairy free. Perfect for those of you on the paleo diet, but still cravin’ a cookie!

Ingredients

  • 3/4 cup of coconut flour (I used Bob’s Red Mill Organic Coconut Flour)
  • 4 eggs
  • 1 tsp of Vanilla Extract
  • 3/4 cup of Honey 
  • 1/2 cup of butter or coconut oil (softened to make your life easier)
  • Sprinkle of Sea Salt

Instructions

Go ahead and prepare the oven.  Preheat at 375° F.

All right, first thing you wanna do is mix all the ingredients (eggs, vanilla extract, sugar, butter or coconut oil, and a sprinkle of sea salt) without the coconut flour first.  This will make things a lot easier because coconut flour is super dry. After all the things are mixed up well, throw in the coconut flour and stir it all up together.  What you’ll expect it to look like:

It is now mixed well enough for you to scoop up about 1 inch balls of them.  Go ahead and do that.  I like to roll them up in to balls and then flatten them down on Parchment Paper like so:

Bake in the oven for about 20 minutes.  Like any other baking recipes, just check on it around 20 minutes and test it out to see if it looks done or not.  It should be hard when it is completely done:

Do you ever add extra liquid (in this case butter I guess?) to the recipe? My coconut flour suggests doing that in some cases. Or mixing coconut flour & another type of flour? Just curious, I LOVE coconut flour but I also love moist cookies!

Thanks for stopping by! I hadn't tried adding more butter, that may help! I know that if you just use the specified amount, it's a bit dry, so maybe I can try that sometime! Thanks for the suggestion :)
