When I was kid, I was confused as to why other children my age didn’t like asparagus. I’ve always loved asparagus! Then one day, I had some overcooked and mushy asparagus somewhere, and realized, maybe this is why. Fortunately, there’s plenty of ways to cook asparagus to make it perfectly delicious! This Oven Roasted Asparagus recipe is one of them.

Health Benefits

What else I love about asparagus is that it’s very nutritious. Asparagus is super good source of fiber, folate, vitamins A, C, E and K! Those are all some great immune boosting vitamins, by the way.

Vitamin A – Vitamin A is highly important for human health. They’re essential for many processes in your body, including maintaining healthy vision, and making sure the normal function of your immune system and organs.

Vitamin C – This vitamin is necessary for the growth, development and repair of all body tissues. It’s involved in the formation of collagen, absorption of iron, the immune system, wound healing, and the maintenance of cartilage, bones, and teeth.

Vitamin E – Vitamin E prevents coronary heart disease, supports immune function, prevents inflammation, promotes eye health, and lowers the risk of cancer.

Vitamin K – Vitamin K is an important factor in bone health and wound healing and plays a role in blood clotting, bone metabolism, and regulating blood calcium levels.

Ingredients

Prep Time: 5 minutes

Cook Time:15 minutes

  • 1 lb  Asparagus
  • 1 tsp Sea salt
  • 1/2 tsp Garlic powder (optional)
  • 3 tbsp Olive oil

Instructions

First things first, preheat oven to 400℉.

While your oven is preheating, trim your asparagus so that the tough parts are gone.  If you want, you can also peel your asparagus with a peeler if you prefer it that way.  I normally don’t go through the trouble, but some folks prefer it this way.

Line a baking pan with aluminum foil. This is actually optional, but I love that it is such an easy clean up when I’m done. If you are not doing this, make sure that you grease up the asparagus and baking pan so nothing sticks making it a hard clean up!

Now, you have two options, I like the latter more. Option 1) you can place your asparagus on the baking pan and drizzle olive oil over it and season with salt and garlic powder. Option 2) In a bowl or plate, add asparagus and then olive oil. Mix well, and then season with salt and garlic powder. I like it this way because I can ensure that everything is super evenly coated. Place on baking pan.

Pop it in the oven for about 10-15 minutes.  I find that in my oven, 15 minutes is perfect amount of cooked-ness.  If you’re not sure, start checking at 10 mins and if you like it more soft/tender, then you can cook it for a couple minutes more. Also, keep in mind that not all ovens are the same, so your oven could cook it faster or slower than mine.

Afterwards, remove from the oven and serve!

  4. Now, you can either place your prepared asparagus on the baking pan and drizzle olive oil over it, or dump your olive oil on a plate, roll the asparagus around in it so that it is evenly coated, and then place it on the baking dish.
  5. Now season with sea salt and garlic powder
  6. Pop it in the oven for about 10-15 minutes.  I find that in my oven, 15 minutes is perfect amount of cooked-ness.  If you're not sure, start checking at 10 mins and if you like it more soft/tender, then you can cook it for a couple minutes more.   7. After 15 minutes, it’s ready to be served!

I cook my asparagus with the same seasoning in my cast-iron on the stove.. so obsessed with them! I will have to try them in the oven next time.
