Mushroom Tomato Stir Fry – This veggie side dish is packed with flavor! Sliced mushrooms cooked with tomatoes is easy, yummy, and quick to make. What’s not to like? I especially love making this dish when I have fresh tomatoes from the garden!

Is Mushroom Tomato Stir Fry healthy?

Short answer – yes, mushroom and tomato stir fry is a very healthy dish. Let’s take a look at the ingredients:

Tomatoes are full of nutrients including Vitamin C, Potassium, Vitamin K1, and Folate (Vitamin B9). It’s great for heart health, cancer prevention, and skin health. I’m so glad I love tomatoes!

Mushrooms are also packed with health benefits – they’re full of Vitamin B, Vitamin D, and also important minerals such as selenium, potassium and copper!

Garlic is used to flavor the dish as well, and I’m the biggest garlic fan! Many people know it’s delicious, but did you know it’s also one of the healthiest ingredients? Garlic is packed with manganese, vitamin B6, vitamin C, and selenium!

How to make Mushroom Tomato Stir Fry?

First, gather your ingredients:

  • 8 oz of mushroom, sliced
  • 2 tomatoes, cut in to wedges
  • 4 cloves of garlic, roughly chopped
  • Cooking oil/fat of choice
  • Salt, as desired
  • 1/2 tsp sugar
  • 1/2 tsp sesame oil

Heat cooking oil/fat in a large skillet or wok over medium high heat.  Add the garlic and cook for about 30 seconds or until fragrant.

Add mushrooms to the dish first, and cook for about 2 minutes, stirring occasionally.

Now add the tomatoes to the pan and stir fry with the mushrooms for about 1 minute. Cover and allow it to cook for about another minute.

Uncover, add salt, sugar, and sesame oil, and stir fry until mushrooms and tomatoes are tender.

Mushroom Tomato Stir Fry - sliced mushrooms stir fried with tomato wedges in a sweet and savory seasoning. Easy to make and delicious veggie side dish!

Ingredients

  • 8 oz of mushroom, sliced
