Stir Fry Celery and Mushrooms

Stir Fry Celery and Mushrooms

This Stir Fry Celery and Mushrooms is an easy side dish that is also quite tasty!  I love the crunch, and I find that it goes well with the texture of mushrooms. What’s also awesome is that this simple dish is not only paleo but also whole30 and vegan!

Types of Mushrooms

There are different types of mushrooms you can cook in this recipe. Now, there’s actually over 10000 mushroom types out there, so of course I can’t list them all, but here’s some of my favorites below!

White Button Mushrooms

This is the most common mushrooms you will find. They’re inexpensive, easy to find, and easy to cook – which is why this is probably the type of mushrooms I use in this recipe the most often.

Portobello Mushrooms/Cremini Mushrooms

If you’re wondering why I’m grouping these two types of mushrooms together, it’s because they’re technically the same type of mushroom!

Portobello mushrooms are the mature version of cremini mushrooms harvested when they’re fully grown. So often times, Cremini shrooms are also known as baby portobello mushrooms.

This mushroom is a little more firm than regular white button mushrooms – and is also a tasty mushroom to try in this recipe.

Shiitake Mushrooms

One of my favorite mushrooms to use in Asian recipes! Shiitake originates from China and Japan, and is super flavorful. They’re more dense, similar to portobello mushrooms, and have an earthy, almost smokey flavor compared to the other mushrooms.

If you want to switch things up, definitely give this mushroom a try in this recipe!!

Health Benefits

About Mushrooms – Mushrooms are a great source of protein and fibre. They contain B vitamins and contain an antioxidant called selenium. Selenium helps support the immune system and prevent damage to cells and tissues. Read more here.

About Celery – While celery is mostly water, it also provides vital vitamins and minerals. Celery is low in calorie and includes vitamin A, which supports immunity, skin, and eye health. It also has vitamin K which helps blood to clot and protects bone density. Read more here.

Ingredients

  • 1/2 bunch of celery
  • 2 cups of mushrooms
  • 1 tbsp olive oil
  • 1 clove of garlic, minced

Instructions

Remove the tough strings from the celery (here are some instructions if you need it). I normally just cut the ends off and then ignore this step, but it’s all about personal preference. Now, cut the celery slightly diagonally and a couple centimeters apart and slice the mushrooms.

Heat the cooking oil/butter in a large pan or wok with some minced garlic. Add the celery and stir-fry for a minute. Then, add the sliced mushrooms and stir fry for another 1-2 minutes.

Remove from heat and serve!

I don't like celery, but...this dish is fantastic! Only thing I did different was slice the celery thinner so it would pick up the butter and mushroom flavours, and I also added just a pinch of salt and pepper. Definitely a recipe I'll be making over and over.
