Chicken Mushrooms Stir Fry

This Chinese Chicken Mushrooms Stir Fry is a simple recipe that makes a delicious entrée! It’s made with chicken, mushrooms of your choice, scallions and more. Sometimes I add some dried red chili peppers to add an extra kick too!

Types of Mushroom to use

There are plenty of different types of mushrooms out there to choose from, so I just wanted to give you some ideas:

White button mushrooms are most commonly used in the States because they’re so easy to find. Slice these up for this recipe if they are on the larger side. If they are small caps, you could actually just cook them without slicing. Or you can halve them also.

Cremino mushrooms (aka baby portobello mushrooms) are pretty interchangeable with white button mushrooms when it comes to cooking them, other than the brown color. They are actually Portobello mushrooms that were harvested prior to full maturity!

Shiitake mushrooms is a wonderful option for this dish too! If you are using fresh shiitake mushrooms (which you usually can find in your local Asian supermarket), then you will want to slice them in to thinner pieces.

Dark Meat vs. White Meat

For this recipe you can use chick breast instead of chicken thighs depending on your preference. Usually, you can use them interchangeably ad then for some recipes, depending on the thickness of the chicken you may need to adjust the timing.

Basically – just make sure that the chicken is thoroughly cooked before serving!

The number of calories in Chicken with mushrooms depends on the ingredients used. So if you were ordering at a Chinese restaurant, this could vary.

However, if you are using this recipe, this recipe makes 4 servings which calculates to 332 per serving. Of course if you want more servings the total calories will change.

How to make Chinese mushroom chicken?

First, gather your ingredients:

  • Marinade:
    • 1 tsp cornstarch
    • 1/4 cup light soy sauce
    • 1 tsp sesame oil
    • 1 tablespoon rice wine vinegar
    • 2 teaspoons honey
    • 3 cloves of garlic, minced
  • Stir Fry
    • 1 lb chicken thigh, cut in to bite size pieces
    • 2 tbsp vegetable oil, separated
    • 8 oz mushrooms, sliced to smaller pieces as needed
    • 2 scallions, cut in to 1 inch slices
    • Salt, to taste

Cut the chicken in to bite sized pieces. In a mixing bowl, combine chicken with marinade ingredients and set aside. Let it marinade for at the very least 15 minutes. You can marinate up to overnight, but place in fridge if marinating over 30 mins

When ready to cook, in a wok or cooking pan, heat up 1 tbsp vegetable oil. Then, add the chicken and stir-fry until the meat is slightly browned (about 2-3 mins). Remove from heat and set aside.

If the pan is not oily enough, you can add another tbsp of oil. Now, add the mushrooms and stir-fry for about 3 minutes.

Add the chicken back in to the pan. Stir fry until chicken is cooked thoroughly.

Then add chopped scallions and salt to taste, stir to mix well.

Remove from heat and serve!

Ingredients

Marinade

  • 1 tsp cornstarch

  • 2 teaspoons honey
  • 3 cloves of garlic, minced

Stir Fry

  • 1 lb chicken thigh, cut in to bite size pieces

  • 8 oz mushrooms, sliced to smaller pieces as needed
  • 2 scallions, cut in to 1 inch slices
  • Salt, to taste
  • (optional) dried red peppers

Instructions

      4. Add the chicken back in to the pan, and add chopped scallions. Stir fry everything for about one more minute or until chicken is cooked thoroughly, mushrooms are tender. Salt to taste.
      5. Remove from heat and serve!

Hi, there are a couple of issues that I don’t see listed. First, in the directions you say to cook garlic for 30 seconds but it’s not listed in the stir fry ingredients. Are we supposed to put garlic? Second, where is the sauce coming from at the end when it is finished cooking? It never says to add anything for that. It only talks about the marinade and I don’t think you add that to the pan as a sauce because it’s contained all that raw chicken.

Thanks for the call out on the garlic! I made this in different ways different times so I missed it when I updated the recipe. It is only in the marinade as minced garlic and you do not add it later with the veggie oil (unless you want extra garlic flavor personally). For the sauce you dump the entire chicken + marinade in to the wok/cooking pan and cook it together. There is no additional sauce you add later.
