We love to have little snacks around the house and one of our favorites is plantain chips — but they’re so expensive! So this week we decided to make our own and make an easy avocado dip on the side so we could feel extra fancy (and it still cost about the same as just buying a little bag of plain plantain chips). This Easy Plantain Chips and Avocado Dip recipe only takes about 10 minutes to prepare and there’s virtually no clean up, so it’s a great little snack to put together when you want something quick and healthy but don’t want to put a lot of effort into prep and clean-up!

Ingredients

For chips:

  • 2 green plantains (get them as green as possible; the more yellow they are the more sweet they become)
  • Baking oil/fat of choice (I used a coconut/olive oil blend)
  • Garlic salt
  • Shallow baking pan
  • Parchment paper


For dip:

  • 1/2 ripe avocado
  • 1 small clove garlic (or 1/2 large clove)
  • 1 tbsp. fresh lime juice
  • 1 pinch crushed red pepper 

Directions

Preheat oven to 375°F. Line baking pan with parchment paper.

Slice plantains thinly using a sharp knife or mandolin. Place the slices into a bowl and coat in cooking fat/oil of choice. Then transfer slices to the lined baking sheet.

Bake for about 15-20 minutes, depending upon thickness of slices.

While plantain chips are baking, make avocado dip. Mince garlic and add to a bowl with avocado, crushed red pepper and lime juice. Use a fork to smash everything together until it is the consistency of a dip.

Remove plantain chips from oven and sprinkle with garlic salt immediately. Transfer to a plate and serve with avocado dip!
