King Oyster Mushroom with Pork Stir Fry

In the states, we can find white button mushrooms and portobello mushrooms pretty much any where. While they are delicious, there are also so many other variety of mushrooms out there! One of my faves is the King Oyster Mushroom. This King Oyster Mushroom with Pork Stir Fry recipe is a fine example of an easy and delish dish you can cook them in!

What are King Oyster Mushrooms?

King Oyster Mushrooms are large mushrooms from the oyster mushroom family – it is white, smooth, and have an elongated stem. These shrooms are very firm, some folks even describe it as ‘crunchy’.

There are several ways to prepare king oyster mushrooms for cooking, some dishes call for cutting it side ways, and some length wise. Here’s some delicious Oyster Mushrooms Recipes for you to try:

Where to buy King Oyster Mushrooms?

King Oyster Mushrooms

You can buy king oyster mushrooms in your local Asian super market. Often times you can also find it in organic or natural grocery stores such as Whole Foods.

If all else fails, you can try growing your own! You can find King oyster mushrooms growing kits on Amazon, for example!

There are several ways to prepare king oyster mushrooms for cooking, some dishes call for cutting it side ways, and some length wise. In this dish, we are going to slice them in to 2-inch slices:

It’s very common to eat pork in Chinese cuisine, which is why this dish is made with pork, however, if you’re not a fan of pork, you can always make this dish with beef instead!

Paleo / Whole30 Substitutes

If you’re on the paleo diet or whole30 diet, it is very easy to substitute just 2 ingredients to make this suitable for your diet! This is all you have to sub:

Instead of soy sauce, use coconut aminos for the pork marinade. This is a very popular substitute for soy sauce.

Instead of corn starch, you can use either potato starch (not 100% paleo, but most folks on the paleo diet are okay with this), or you can also use tapioca starch.

Ingredients

  • 4 cloves of garlic, crushed
  • 1 lb of pork loin, cut in to slices
  • 2 tbsp olive oil
  • 4 green onions, cut in to 2 inches
  • 6 king oyster mushrooms, cut in to 2-inch slices
  • Sea salt, as desired
  • 1 tbsp of cornstarch mixed with 2 tbsp of water
  • 1 tbsp of soy sauce

Instructions

Mix the slices of pork in the cornstarch water mixture, along with soy sauce. Let it sit in the mixture for about 10 minutes.

Heat olive oil in frying pan at medium high. Cook sliced pork loin and crushed garlic in the oil and stir fry for 1 minute.

Add the green onions and stir fry for another minute and remove from heat.

In the same pan, add king oyster mushrooms and stir fry for about 4 minutes.

Return the garlic and pork loin to frying pan and cook for about 1 minute. Sprinkle with sea salt as desired, and stir fry for about 1 more minute or until meat is cooked thoroughly.

Remove from heat and serve!

King Oyster Mushroom with Pork Stir Fry

Ingredients

  • 6 king oyster mushrooms, cut in to 2-inch slices

Instructions

Mix the slices of pork in the potato starch water mixture, along with coconut aminos for 10 minutes. Let it soak in the mixture.

Heat olive oil in frying pan at medium high. Cook sliced pork loin and crushed garlic in the oil and stir fry for 1 minute.

Add the green onions and stir fry for another minute and remove from heat.

In the same pan, add king oyster mushrooms and stir fry for about 4 minutes.

Return the garlic and pork loin to frying pan and cook for about 1 minute. Sprinkle with sea salt as desired, and stir fry for about 1 more minute or until meat is cooked thoroughly.

Remove from heat and serve!
