Paleo Happy Meal

French fries are one of my all-time favorite foods. However, when they’re made traditionally, they’re terribly unhealthy and decidedly not paleo. The good news is the paleo world is a big fan of the sweet potato, and when turned into “fries” — especially when you kick it up a notch with some spice — they can be turned into a healthy, flavor-packed treat. I paired these with my favorite paleo chicken nuggets to create my very own little paleo happy meal.

Paleo Chicken Carbonara Salad

So I recently discovered Chicken Carbonara… oh my. It’s heaven in my mouth, but weighs a little heavy on the guilty-pleasure scale. But I’ve always been a firm believer that just because food is healthy, it doesn’t have to be boring. So I found a way to create guilt-free Chicken Carbonara: in salad form, of course! I tried to take all of the fresher elements of the dish and replace the useless filler-calories with plant-based things, and I have to admit, I’m pretty pleased with it. Cilantro Lime Chicken with Avocado Pepper Salsa

Whenever the weather starts to get nice here in Ohio, my entire mindset changes — including my pallet. I start craving fresh produce and fun flavor combinations that my hibernating body just didn’t want in the winter. I love to make anything with the cilantro-lime flavor profile, and this chicken and “salsa” dish is one of my favorites.
