Cilantro Lime Chili Chicken Tenders

The marinade in this Cilantro Lime Chili Chicken Tenders recipe is what really makes it special — just an hour or two of soaking in citrus and spice really imparts a multi-faceted flavor that makes the taste buds tingle. And don’t skip the lime zest! If you’ve never used zest in a recipe, it creates an entirely different experience than just using the juices of the fruit. Lime zest carries several different flavors with it, including something that is reminiscent of vanilla.

Easy Paleo Chicken Soup

A while back, I suddenly came down with something out of no where (THANKS, everyone that was sick at work…) and it was the worst time for it!  I had a lot of stuff to do, and AIN’T NOBODY GOT TIME FOR THAT! I knew exactly what I had to do (or eat).  A crap load of nutritious chicken soup!   So I picked up all the ingredients on the way home from work and made this Easy Paleo Chicken Soup when I got home.  Ate it every meal, and it was perfect.  I got well within 2 days.

Deconstructed Paleo Chicken Egg Roll Bowl

Looking for recipes that both you and your family members who aren’t Paleo can enjoy together? This is definitely one of them. My boyfriend doesn’t follow diets of any kind, typically considering himself a meat-and-potatoes kind of man. I offered him a big bowl of this as soon as I took it off the stove and I couldn’t believe how much he liked it!

Without the tortilla a burrito is lower in fat, lower in carbs and you get more of the good stuff… the filling! With just a few minor tweaks to the traditional recipe the genius-ness of this paleo burrito bowl is the perfect lunch or dinner!

Baked Ginger Spiced Chicken Drumsticks

The big question every time I’m making dinner is… do I want to go stove top or oven?  I will say I normally stir fry, as it is easy and fast.  However, some days, I just don’t want to stand at the stove and pay attention to what I’m cooking!  What’s nice about this Baked Ginger Spiced Chicken Drumsticks recipes is that this is one of those recipes you can just pop in the oven, and relax (okay – maybe you do have to go back and turn the drumsticks over at one point, but other than that…)  So if

Easy Orange Chicken Stir-Fry

This Easy Orange Chicken Stir-Fry is easy and paleo-approved — and the one-pan preparation makes cleanup a breeze! I love how flavorful this is without being overwhelming; sometimes when I get orange chicken from a restaurant, I feel like I’m just eating solid orange juice and the flavor is too sweet for me. This preparation leaves you with a subtle, fragrant orange flavor and a small kick from the fresh garlic and ginger, making it great for all palates. If you do like more of that flavor, the fresh orange garnish makes it easy for you to adjust. And, as

One-Pan Roasted Chicken and Veggies (Paleo, Gluten Free, Low Carb, Whole30)

About this One-Pan Roasted Chicken and Veggies… I’ve mentioned a few times before that I love to do meal prep — and here’s why! First, you can do recipes like this that are super easy and only take a small chunk out of your day, and then you’ve got food for the rest of the week. But most importantly, it helps you stay on track: you’re more likely to stick to your paleo/keto/clean eating etc. if there’s already food and snacks available to you that stick to that plan. If you have to go foraging for something, you’re more likely
