Baked Ginger Spiced Chicken Drumsticks

The big question every time I’m making dinner is… do I want to go stove top or oven?  I will say I normally stir fry, as it is easy and fast.  However, some days, I just don’t want to stand at the stove and pay attention to what I’m cooking!  What’s nice about this Baked Ginger Spiced Chicken Drumsticks recipes is that this is one of those recipes you can just pop in the oven, and relax (okay – maybe you do have to go back and turn the drumsticks over at one point, but other than that…)  So if

Easy Orange Chicken Stir-Fry

This Easy Orange Chicken Stir-Fry is easy and paleo-approved — and the one-pan preparation makes cleanup a breeze! I love how flavorful this is without being overwhelming; sometimes when I get orange chicken from a restaurant, I feel like I’m just eating solid orange juice and the flavor is too sweet for me. I like to add bacon to make it a complete and satisfying lunch that makes all my coworkers jealous!

But as I researched different ingredients, I realized that I could pack quite a punch in the nutrition category while adding both flavor and texture and make this into a Super Salad! The mircrogreens alone (which are young plants, harvested at 7-14 days) add a ton of vitamins and nutrients with just a little sprinkle.

Paleo Spicy Thai Noodle Salad

So, zucchini noodles are zoodles.  Does that mean sweet potato noodles are spoodles? Whatever they are called, sweet potatoes have the perfect texture for a Paleo Spicy Thai Noodle Salad. Tahini and coconut aminos pair together perfectly to give this salad the creamy umami that makes a good thai noodle salad.  The sweet heartiness of the sweet potato, crunch of the carrot and creamy dressing is the perfect salad for a spring party or picnic!
