I know what you are thinking, salad for breakfast?!!! Just hear me out on this one. Maple and lemon dressing with a perfect over easy egg on a bed of hearty greens and salty smoky ham. This is a simple salad that I love for breakfast. Well, honestly I eat this Paleo Breakfast Salad with Simple Vinaigrette for lunch and dinner too! Simple Oven Roasted Brussels Sprouts

I’m a weirdo and love Brussels Sprouts.  It’s funny because I don’t actually recall ever having them when I was younger.  So maybe that is why I never learned to hate them at a young age (though I never did have a “I hate veggies” stage).  I will admit I’ve had brussels sprouts that were made… not so tasty.  But it doesn’t have to be this way!  It’s so easy to make yummy tasting brussels sprouts!  For example, this super easy oven roasted brussels sprouts!

Easy Paleo Chicken Soup

A while back, I suddenly came down with something out of no where (THANKS, everyone that was sick at work…) and it was the worst time for it!  I had a lot of stuff to do, and AIN’T NOBODY GOT TIME FOR THAT! I knew exactly what I had to do (or eat).  A crap load of nutritious chicken soup!   So I picked up all the ingredients on the way home from work and made this Easy Paleo Chicken Soup when I got home.  Ate it every meal, and it was perfect.  I got well within 2 days.

Panang Curry Soup (Paleo, Gluten Free)

Panang Curry is one of my favorite Thai dishes. Something about the sweet from the coconut milk and the spicy from the thai chilis that is heaven in my mouth. This recipe takes all of the beautiful flavors of Panang Curry and marries them with the concept of butternut squash soup. Using the creaminess of leftover cooked butternut squash and an immersion blender the two dishes come together to make a creamy, sweet and spicy soup!
