The Best Mexican Chicken Soup!

All right, I’ve gotten requests for this one!  So, here it is.  The most delicious Mexican Chicken Soup!  I originally stumbled upon a recipe for this from Paleo Diet Lifestyle.  However, I’ve since made it many many times (cause it’s so good!) and tweaked it here and there and now it’s an adaptation.  For example, instead of buying store bought broth and finding roasted chicken laying around – I make this by purchasing a rotisserie chicken!

A Healthy Snack: Baked Zucchini Chips

One of my favorite things to do is to experiment with different ideas to cook or bake. This weekend, I made baked zucchini chips. This is a healthy snack choice and reminds me of that Kale Chips making phase I went through a while back.  Something to take note though, they’re a lot more difficult to make than kale chips, but if they come out right, they are super super tasty!  Here’s how I made these Baked Zucchini Chips:

Simple and Healthy Baked Eggs in Avocado

On Sunday morning (okay, it was more like noon…), I woke up to see an avocado in the fridge I had forgotten all about.  As much as I love avocados, I don’t usually eat it for breakfast.  That’s when I remembered hearing or seeing some where that you can bake an egg in an avocado.  Perfect!  So here’s what I whipped up for breakfast/brunch:  Baked Eggs in Avocado:
