Pan Roasted Rosemary Chicken and Mushrooms

We just got our very first cast iron pan (a cast iron grill pan, no less!) so I decided to try it out with a pan roasting recipe. If you don’t have cast iron, any heavy pan will do — just make sure that it’s safe to go into your oven. This recipe is another potential one-pan recipe that utilizes your oven, so it’s great for the colder months when you’re feeling a little lazy and cold, but want some great food.

Paleo Roasted Bacon Sliced Brussels Sprouts

Growing up I always thought Brussels sprouts were the worst! Brussels sprouts were really the only vegetable that I didn’t eat. I even ate my beets, turnips and spinach! But as I’ve grown up (I’m not sure I really have yet!) and my tastes have evolved, I’ve learned to appreciate these mini cabbages. If you are like me and have never been a big fan of Brussels, I have a few key things that will make them not only palatable but even delicious!

One-Pan Roasted Salmon and Broccolini

WRONG. So, just like with my own spiked version of Paleo-Eggnog (soon to come), I made my Paleo Pumpkin Spice Latte!

Snack Table Worthy Paleo Beef Chili

Are you ready for some football! I sure am. I love everything about it. Of course you wouldn’t know that because I’m always cooking in the kitchen during the game. My favorite part, truly, is that everyone gets together, piles on the couch and yells at the TV. Well, at least in my house.

Soba Noodles with Glazed Tofu and Stir Fried Veggies (Vegetarian, Gluten Free)

I got my inspiration for this recipe from a few different places. First and foremost, DreamyLeaf’s Teriyaki Glazed Tofu Steaks recipe — she posted a picture on Instagram and though I’ve never been a big tofu person, I almost started drooling just looking at it. I also had some inspiration from a meal I had at Canteen in Toronto, where I had my first taste of soba noodles. And, as usual, I just kind of threw my own random tastes and ideas in there, as well.

Easy Salmon with Lemon and Basil

You’ve probably always heard of how great salmon is for you.  It’s true!  Salmon is a great source of the “good” cholesterol, omega-3 fatty acids.  It’s good for metabolism, cardiovascular health, and brain functions!  But my favorite thing about salmon is that it is also delicious – and really easy to make!  Here’s an easy recipe – Salmon with Lemon and Basil!
