Paleo Roasted Root Vegetables

Root vegetables are to fall as asparagus is to spring. And yes, you know a true foodie when their season’s are marked by the changes in produce not the changes in weather. And I know, Brussels Sprouts aren’t root vegetables, but the name of this recipe was so catchy I couldn’t help myself! Forgive me.¬†This Paleo Roasted Root Vegetables recipe is not your typical roasted root vegetable recipe. Yes, there are herbs and rustic knife cuts. But, this method of seasoning makes it so every vegetable is slightly different and totally jazzes up what is typically a one note dish.

Roasted Lemon-Thyme Chicken with Fall Veggies

I’ve lived in the lower-North East U.S. all of my life. From Pittsburgh, to White Plains, NY, landing in Philadelphia, and now in middle-of-nowhere Ohio. And in all of these places, fall seems to come on FAST and disappear into winter just as quickly. So we kind of have to jump from flip-flops-and-shorts to hoodies-and-hats very quickly, or we miss out on this season altogether.
