Prime Rib Roast aka Standing Rib Roast is delicious to me but I pretty much never make it because I don’t often have like 8-10 people coming over for dinner, which is what most Standing Rib Roast recipes are designed for.  And no… I’m not about to throw a dinner party just so I can enjoy some!  So… if you have this same problem, you’re in luck!  Because I’ve figured out the best way to make Standing Rib Roast for Two!

You’ll see that I say that it’s for two but I put in

Ingredients

  • 2.5 lb Standing Rib Roast – You only need about 2.5 lbs of Standing Rib Roast to satisfy 2-3 eaters. That’s about 2 ribs.  
  • 2 tsp. Salt
  • 1 1/2 tsp. Pepper
  • 1 1/2 tsp. garlic powder
  • 1 1/2 tbsp. olive oil
  • 1 tsp Paprika

Instructions

Preheat oven to 250.  In a small bowl mix the olive oil, salt, pepper, and paprika together.  Rub olive oil mixture all over the prime rib. Heat a skillet over medium heat until hot. Brown meat on all sides for about 3 minutes each.

Transfer the meat on a baking dish and pop it in the oven.  By the way, if you have a skillet that is oven proof, you can also just stick it straight in the oven.

Cook for about 45 minutes (This would make it medium rare.  Cook it longer if you want it cooked more.) – Start checking tho at 30 mins in case your oven is stronger than mine!  Basically you want to stick a meat thermo in the middle of the meat and see that it’s about 120 when you remove it from the oven. 

Then, what you want to do is wrap it up in aluminum (just covering is fine) and let it sit for about 20 minutes. (Always let your steaks rest after cooking!)  The meat will be medium rare.  Cook it longer if you want it cooked more.

I have a 2.22 lb roast ready to be cooked per your instructions. I was confused as it’s called a standing roast but it’s cooked on it’s side as it’s too small to stand…I hope it still comes out like your photos. Looks like a tasty recipe….can’t wait!

Hi there! Yes that's true - sorry for the confusion! When I buy it it usually says "standing rib roast" on the package so that's why I called it that... I hope it works out well for you!

Girl, I love that you love beef! As far as roasts, my go-to's are a big tenderloin or center cut sirloin roast, but you've totally inspired me to make a prime rib roast this month! yaaaassss
