This Pork Stir Fry with Vegetables is an easy and delicious dinner made with tender slices of pork, broccoli, carrots, and mushrooms in a savory stir fry sauce! It comes together quickly and is perfect served with white rice for an easy weeknight meal.

I love stir fries because you can cook your protein and vegetables all in one pan, and you can easily change up the ingredients depending on what you have at home.
For this pork stir fry, I used broccoli, carrots, and mushrooms. The broccoli and carrots add a nice crunch, while the mushrooms soak up all that delicious savory sauce.
What type of pork should I use?
There are several cuts of pork that work well for stir frying.
I used pork tenderloin, which is one of my favorites because it is lean, tender, and cooks very quickly when thinly sliced.
You can also use:
- Pork loin
- Boneless pork chops
- Pork shoulder, thinly sliced
- Pork belly
Whichever cut you use, slice the pork thinly so it cooks quickly and stays tender.
For pork tenderloin, pork loin, pork chops, or pork shoulder, I recommend slicing against the grain.
If your pork is difficult to slice thinly, you can place it in the freezer for about 20 to 30 minutes first. Firming it up slightly makes slicing much easier.
If using pork belly, keep in mind that it is much fattier than pork tenderloin. You may need less cooking oil since the pork belly will release some of its own fat as it cooks.

Rice wine
For the pork marinade and stir fry sauce, I use Chinese rice wine.
You can use michiu rice wine or Shaoxing wine for this recipe. I used michiu when I made mine.
Michiu has a lighter, cleaner flavor, while Shaoxing wine has a deeper and slightly more complex flavor. Either works well in this pork stir fry, so use whichever you have on hand.

Vegetables
For this stir fry, we're using:
- Broccoli
- Carrots
- Mushrooms
I like this combination because you get different textures in every bite.


The carrots and broccoli go into the pan at the same time since both need a little longer to cook. The mushrooms are added afterward because they soften and cook much more quickly.
You can also substitute or add other vegetables such as:
- Snow peas
- Snap peas
- Bell peppers
- Baby corn
- Bok choy
- Napa cabbage
- Zucchini
- Water chestnuts
Just keep in mind that different vegetables cook at different speeds, so add harder vegetables first and quicker-cooking vegetables toward the end.

How to make Pork Stir Fry with Vegetables
First, thinly slice the pork and place it in a bowl.
Add soy sauce, rice wine, cornstarch, sesame oil, and sugar. Mix everything together until the pork is evenly coated and allow it to marinate for about 15 to 20 minutes.

While the pork is marinating, prepare your vegetables.
Heat cooking oil in a large skillet or wok over medium-high heat.
Add the garlic and stir fry briefly until fragrant. Then add the marinated pork and spread it out into a single layer. Allow it to cook for about a minute before stir frying. Continue cooking until the pork is mostly cooked through, then remove it from the pan and set aside.



Add a little more cooking oil if needed.
Add the broccoli and carrots together and stir fry for about 2 minutes.
You can add a small splash of water and cover the pan briefly if you prefer your broccoli a little more tender.

Add the sliced mushrooms and continue stir frying for another 2 to 3 minutes, or until the vegetables are cooked to your liking.


Return the pork to the pan.
Add the oyster sauce, sugar, and white pepper, if using. Stir fry everything together for another 1 to 2 minutes, or until the pork is completely cooked through and the pork and vegetables are evenly coated in the sauce.

Remove from heat and serve!

What to serve with pork stir fry
I usually serve this Pork Stir Fry with Vegetables with steamed white rice.
You could also serve it with:
- Brown rice
- Jasmine rice
- Fried rice
- Noodles
- Cauliflower rice
If you like things spicy, you can also serve it with chili crisp or chili oil!

How do I store leftover pork stir fry?
Allow the pork stir fry to cool, then transfer it to an airtight container. Store it in the refrigerator for up to 3 to 4 days.
Can I freeze pork stir fry?
Yes! You can freeze leftover pork stir fry in a freezer-safe container for up to 2 to 3 months.
Keep in mind that the vegetables may be a little softer after freezing and reheating, especially the broccoli and mushrooms.
Thaw overnight in the refrigerator before reheating for best results.
How do I reheat pork stir fry?
You can reheat pork stir fry in a skillet over medium heat with a small splash of water until warmed through.
You can also microwave it in 30- to 60-second intervals, stirring between each interval, until heated through.
Try not to overheat it, as the pork can become tougher and the vegetables can get too soft.

Pork Stir Fry with Vegetables
Tender slices of pork are stir fried with broccoli, carrots, and mushrooms in a savory sauce for an easy and delicious weeknight dinner!
Ingredients
For the pork
- 1 lb pork tenderloin, thinly sliced
- 1 ½ tablespoon soy sauce
- 1 tablespoon rice wine, such as michiu or Shaoxing wine
- 1 teaspoon cornstarch
- 1 teaspoon sesame oil
- ½ teaspoon sugar
For the stir fry
- 1 to 2 tablespoon cooking oil
- 2 cloves garlic, minced
- 2 cups broccoli florets
- 1 medium carrot, thinly sliced
- 6 to 8 oz mushrooms, sliced
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- ¼ teaspoon white pepper, optional
Instructions
- Add the sliced pork to a medium bowl. Add soy sauce, rice wine, cornstarch, sesame oil, and sugar. Mix well until evenly coated. Marinate for 15 to 20 minutes.
- While the pork is marinating, prepare the broccoli, carrots, mushrooms, and garlic.
- Heat 1 tablespoon cooking oil in a large skillet or wok over medium-high heat.
- Add the garlic and stir fry briefly until fragrant. Add the marinated pork and spread it into a single layer. Let cook undisturbed for about 1 minute, then stir fry until mostly cooked through. Remove the pork from the pan and set aside.
- Add a little more cooking oil if needed. Add the broccoli and carrots and stir fry for about 2 minutes. For more tender broccoli, add a small splash of water and cover briefly.
- Add the mushrooms and stir fry for another 2 to 3 minutes, or until the vegetables are cooked to your liking.
- Return the pork to the pan. Add oyster sauce, sugar, and white pepper, if using.
- Stir fry everything together for another 1 to 2 minutes, or until the pork is completely cooked through and the pork and vegetables are evenly coated.
- Remove from heat and serve with rice. Enjoy!
Notes
- Pork loin, boneless pork chops, pork shoulder, or thinly sliced pork belly can also be used.
- Feel free to swap in other vegetables such as snow peas, snap peas, bell peppers, bok choy, napa cabbage, zucchini, or baby corn.
- Add a little chili crisp or chili oil when serving if you like some heat.
