Dumplings aren't just a recipe.
They're a format.
Once you understand the structure, you can fill them with almost anything and host your own dumpling night anytime.
What You Learned
Keep these core ideas in mind and you'll never forget how to make dumplings:
- Dumplings = wrapper + filling + seal + cook
- Remove moisture from vegetables (salt → squeeze dry)
- Meat absorbs water → mix until sticky
- Don't overfill
- Press out air before sealing
- Dumplings are cooked when they float and puff slightly
- Cook straight from frozen - never thaw first

The Dumpling Formula (Use This Forever)
You are not memorizing recipes - you are learning a ratio.
Protein or Mushroom Base + Vegetable + Aromatics + Seasoning + Oil + Binder
Examples:
- Chicken + napa cabbage
- Tofu + cabbage
- Shrimp + chives
- Pork + shiitake mushrooms
Once the moisture is balanced, almost anything works.

How to Cook Dumplings
Boiling (most traditional)
- Bring water to boil
- Add dumplings and stir once
- When floating, add ½ cup cold water
- When floating again → done
Pan Fry (potstickers)
- Oil in pan
- Brown bottoms
- Add water + cover
- Water evaporates → bottoms crisp again
Cooking From Frozen
Freeze dumplings on a tray first (not touching).
Transfer to bag after frozen.
Cook directly from frozen - just add 1-2 extra minutes.
Build Your Own Dumpling Sauce
Start with:
Soy sauce + vinegar + sesame oil
Then adjust:

|---|---|
| Chili oil | spicy |
| Garlic | aromatic |
| More vinegar | tangy |
| More soy | savory |
There is no single "correct" dumpling sauce - everyone balances it differently.
How to Store Dumplings
Uncooked dumplings:
If you're cooking them soon, keep them covered in the refrigerator and use within 1-2 days. For longer storage, freezing is better - the wrappers can get soggy in the fridge.
To freeze:
Arrange uncooked dumplings in a single layer on a tray without touching. Freeze until solid, then transfer to a freezer bag or airtight container.
Frozen dumplings:
For best quality, use within about 3 months. Cook directly from frozen - do not thaw first.
Cooked dumplings:
Store in an airtight container in the refrigerator and eat within 3-4 days.
