It’s true. Cookies aren’t really paleo. But sometimes you just get that super intense cookie craving. Better yet… a chocolate cookie craving! Well, I have these “Paleo” cookie recipes on this site just for this occasion. So that if you’re going to satisfy your craving, at least do it more gracefully with healthier ingredients!

The first time I made this ice cream, I made it as the dessert portion of a meal. My guest was amazed that I made it from scratch (without an ice cream maker). What’s awesome about this though is that not only was it ridiculously easy to make, but it also only consisted of… ONE ingredient.
