It’s spring! For me that means hosting casual brunches, early season gardening and getting outside to enjoy the warming sun. These Ham, Peppers, Jalapeno Omelette Cups are perfect for all of those occasions.
As mentioned before, I love eating seasonably. There are many reasons for it, and plus, there are just so many yummy summer veggies! So for breakfast, I decided to make an Omelette with Summer Vegetables. You can really add/remove/modify the ingredients list (here’s what’s in season!), but what I have included is mini bell peppers and tomatoes.
So, I’m back in the States! Taiwan was a fun travel and food experience, and I actually have a lot more things to blog about, but for now, a little break from all that Taiwanese food… Here’s my “fancy” Spinach Omelette Recipe!
