Balsamic Tomato Cucumber Avocado Salad

Balsamic Tomato Cucumber Avocado Salad

The other day, I had the hugest breakfast ever – I’m talking a giant ham and cheese omelet, some bacon, and avocado… 2 hours before lunch time.  So when lunch time rolled around, I was like, okay.  Let’s get real.  You probably shouldn’t eat a crap load of food like you usually do for lunch.  So I took a peek at the fridge, and found tomatoes, cucumbers, and avocados!  Just FYI, these are some of my favorite things.  Instantly, I am drooling thinking about a yummy Balsamic Tomato Cucumber Avocado Salad.

Spring Beet Radicchio Salad with Blood Orange Vinaigrette

Spring is here! One of my favorite spring combinations is beets, radicchio and citrus. The earthiness of the beets paired with the brightness of citrus makes for the perfect bright Spring Beet Radicchio Salad. The orange vinaigrette with the green lettuce and beets makes for a beautiful and impressive presentation. I like to add bacon to make it a complete and satisfying lunch that makes all my coworkers jealous!

Spicy Shrimp Super Salad

This Spicy Shrimp Super Salad recipe evolved in my head slowly, over time. And once it came together I couldn’t wait to share it! It’s inspired by deconstructed shrimp tacos, as you’ll notice by the flavor profile and the slaw-like salad base. But as I researched different ingredients, I realized that I could pack quite a punch in the nutrition category while adding both flavor and texture and make this into a Super Salad! The mircrogreens alone (which are young plants, harvested at 7-14 days) add a ton of vitamins and nutrients with just a little sprinkle.

Tahini and coconut aminos pair together perfectly to give this salad the creamy umami that makes a good thai noodle salad.  The sweet heartiness of the sweet potato, crunch of the carrot and creamy dressing is the perfect salad for a spring party or picnic!

Greek Chicken Salad with Tzatziki Dressing

I discovered Greek food this summer, and when I finally tried the chicken salad that the Greek place at the mall makes, I knew I had to come up with my own recipe. This Greek Chicken Salad with Tzatziki Dressing recipe is great for meal-preppers like myself or people who don’t have a lot of time to cook, because you basically do all of the hard work the night before and then throw everything together when you’re ready to eat it.

Paleo Grilled Steak Nicoise Salad

When it’s sunny and hot out, all I want to do is play yard games and swim in the lake. The last thing I want to do when I get home from work is to be indoors in a hot kitchen. This Paleo Grilled Steak Nicoise Salad is almost completely cooked on the grill, making prep and clean up a breeze. Which means I can spend more time outside beating my boyfriend at badminton and bocce ball!

Gluten Free Chicken Carbonara Salad

So I recently discovered Chicken Carbonara… oh my. It’s heaven in my mouth, but weighs a little heavy on the guilty-pleasure scale. But I’ve always been a firm believer that just because food is healthy, it doesn’t have to be boring. So I found a way to create guilt-free Chicken Carbonara: in salad form, of course! I tried to take all of the fresher elements of the dish and replace the useless filler-calories with plant-based things, and I have to admit, I’m pretty pleased with it. This was definitely a flavorful, interesting salad to eat. And I kind of really
