Paleo Mushroom Cauliflower Fried Rice

I love this mushroom fried “rice” recipe — it is SO quick and easy to make, and it tastes so good! But at the same time, it’s absolutely packed with nutrients from the high-quality protein in the eggs to the vitamin- and mineral-rich mushrooms. The fiber and protein in the riced veggies will help you feel full without all of the slow-you-down carbs that you’d get from regular rice. You can’t go wrong with this Paleo Mushroom Fried Cauliflower Rice!

Stir Fry Cabbage with Sichuan Peppercorn (Paleo, Gluten Free, Whole30, Vegan)

I feel like cabbage is so underrated!  It’s so delicious to me… but I mostly stir fry it Chinese style.  One common method is to stir fry cabbage with dried shrimp (recipe here), but another is to stir fry cabbage with Sichuan peppercorn! This gives it a different flavor and it’s always fun to switch it up and eat something different and delicious once in awhile.

Easy Asian Broccolini

If you love broccolini but have never tried making it before or never had it before but are curious, here’s an Easy Asian Broccolini recipe to try!   As you probably already know, Broccolini is a green vegetable similar to broccoli but with smaller florets and longer, thinner stalks. However, here’s an interesting fact you might not know –  Broccolini is actually a natural hybrid of Broccoli and Gai Lan (Chinese Broccoli)!

Paleo Spanish Fig Bread (Pan de Higo)

It’s the time of year where there seems to be a party or event every weekend. While I love seeing people I don’t see as often as I should, I find myself indulging in non-Paleo snacks more often than I should. This year, I’ve tried a new tactic! I bring Paleo-friendly appetizers to every gathering and this Paleo Spanish Fig Bread is always a hit for my paleo and non-paleo friends!

Paleo Coconut Caramel Brownies

I don’t usually bake. I’ve always been good at it, but it just never seems quite as fun. To me, baking is the flip-side of cooking: cooking is all organized chaos and anything goes, while baking is rule-heavy and chemistry reliant. So when the words “I’ll bake you something!” came out of my mouth as a bribe to get my supervisor at work to help me, I got a little scared when I realized I’d have to do something I hadn’t done in years — and this time, do it Paleo.

Paleo Roasted Root Vegetables

Root vegetables are to fall as asparagus is to spring. And yes, you know a true foodie when their season’s are marked by the changes in produce not the changes in weather. And I know, Brussels Sprouts aren’t root vegetables, but the name of this recipe was so catchy I couldn’t help myself! Forgive me. This Paleo Roasted Root Vegetables recipe is not your typical roasted root vegetable recipe. Yes, there are herbs and rustic knife cuts. But, this method of seasoning makes it so every vegetable is slightly different and totally jazzes up what is typically a one note dish.

Grandma’s Dilly Beans (Pickled Green Beans)

I am not a breakfast fan, but I am a brunch fan. There is something to be said about a relaxing Sunday with a nice Bloody Mary (or Maria if you are me). The classic garlicky and spicy pickled green beans is the quintessential stirring stick of a bloody Mary. And best of all, to achieve this classic dilly bean, you just need is some basic canning equipment and patience.

Simple Oven Roasted Brussels Sprouts

I’m a weirdo and love Brussels Sprouts.  It’s funny because I don’t actually recall ever having them when I was younger.  So maybe that is why I never learned to hate them at a young age (though I never did have a “I hate veggies” stage).  I will admit I’ve had brussels sprouts that were made… not so tasty.  But it doesn’t have to be this way!  It’s so easy to make yummy tasting brussels sprouts!  For example, this super easy oven roasted brussels sprouts!

Slow Cooker Tomato Basil Soup (Paleo, Gluten Free)

Whoever came up with the tomato + basil combo was a GENIUS.  These two ingredients together is one of my favorite pairings, so I guess it makes total sense that I would enjoy having Tomato Basil Soup!  Have you ever tried making your own Paleo Tomato Basil Soup?  It’s quite easy (and delicious!), especially if you have a slow cooker.  Here’s how!
