Bok Choy
Bok choy (aka pak choi or pok choi) is a type of Chinese cabbage but unlike regular cabbages, they do not form heads and have leafy greens with bulbs at the bottoms.

Some describe the flavor as somewhere between spinach and water chestnuts with a slight hint of sweet and peppery undertone.

Mushrooms
We are using white button mushrooms today, but you can actually cook this dish with different types of mushrooms - for example shiitake mushrooms and beech mushrooms!

How to cook Bok Choy Mushrooms Stir Fry (Step by Step)

First gather your ingredients:
- 2 tablespoon cooking oil of choice
- 3-4 cloves of garlic, crushed
- 3 bunches of Shanghai bok choy
- 1 cup white button mushrooms, sliced
- Salt, as desired

Cut off the end of your bok choy with a knife and discard.
Slice the bok choy in to 1-2 inch pieces, but separate the whites from the leafy green parts.
Heat oil in a cooking pan or wok over high heat. Add the garlic and cook for about 30 seconds or until aromatic.
Add the white pieces of bok choy and mushrooms in to cooking pan or wok. Stir fry for about a minute, and then add the leafy greens.


Stir fry for 30 seconds, and then add ¼ cup of water and cover with a lid for about a minute.
Uncover the cooking pan/wok, and then add salt as desired. Stir fry for another minute or until everything is tender - bok choy should be vibrant green, and mushrooms should be tender.
Remove from heat and serve!

Storage & Reheat
If you have leftovers, let them cool completely before storing.
- Fridge: Store in an airtight container in the refrigerator for up to 3 days.
- Reheat: Warm in a wok or skillet over medium heat for the best texture. You can also microwave it for 1-2 minutes, but the bok choy may soften more.
- Freezer: Not recommended - bok choy doesn't freeze well and will turn mushy once thawed.

FAQ
Can I use other mushrooms besides white button?
Yes! Shiitake, beech, or even cremini mushrooms all work great. They'll add different textures and flavors to the stir fry.
Can I use regular bok choy instead of Shanghai bok choy?
Absolutely. Just chop the stalks and leaves into bite-sized pieces, separating the whites from the greens so they cook evenly.
Do I need to blanch the bok choy first?
Nope! Stir-frying directly with a splash of water (and covering for a minute) keeps the bok choy tender-crisp and vibrant.
How do I prevent soggy bok choy?
Avoid overcooking. Stir fry quickly over high heat and remove from the pan once the greens turn bright green.

Ingredients

- Add the leafy greens, then pour in ¼ cup water. Cover with lid and steam for 1 minute.
- Uncover, season with salt, and stir fry another 1 minute until bok choy is vibrant green and mushrooms are tender.
- Remove from heat and serve immediately.
