Cucumber Tomato Avocado Salad with Balsamic Vinegar - The other day, I had the hugest breakfast ever - I'm talking a giant ham and cheese omelet, some bacon, and avocado... 2 hours before lunch time. So when lunch time rolled around, I was like, okay. Let's get real. You probably shouldn't eat a crap load of food like you usually do for lunch.
So I took a peek at the fridge, and found tomatoes, cucumbers, and avocados! Just FYI, these are some of my favorite things. Instantly, I am drooling thinking about a yummy Cucumber Tomato Avocado Salad!
When I go out and order a tomato cucumber salad, it's usually made with lemon juice. However, I wanted something a little different. Have you ever had avocados drizzled with balsamic vinegar? It's freakin' delicious. So I decided to make it with Balsamic Vinegar!
Btw - tomatoes are super healthy for you! Tomatoes are full of nutrients including Vitamin C, Potassium, Vitamin K1, and Folate (Vitamin B9). It's great for heart health, cancer prevention, and skin health.

There's so many things you can do with this salad to give it a different kick.
For example, you can sprinkle some feta cheese if you eat dairy, you can add some zaatar seasoning to give it a lebanese/middle eastern flavor, you also add basil for an additional delicious flavor (basil + tomato = the bomb dot com!).
Ingredients
- 2 Roma Tomatoes
- 4 Baby Cucumbers
- 1 Medium Avocado
- 1 tablespoon Balsamic Vinegar
- 1 tablespoon Olive Oil
- Juice of ½ Lemon
Instructions
Chop up your tomatoes, cucumbers, and avocado and place in a mixing bowl. Add balsamic vinegar, olive oil, lemon juice in the bowl. Carefully mix well. I use a large wooden spoon, and just swirl things around gently. Pour in to serving bowl and serve!
