Snow Peas vs Snap Peas

Snow Peas and Snap Peas are very similar - Both are shelled with peas in the pod. They both are low in calories, while being nutritious (fiber, vitamin C, etc.). However, Snow Peas and Snap Peas are not the same.
Snap Peas are actually crossed between snow peas and garden peas (aka sweet peas)! Physically, snow peas are flatter and contain smaller peas inside. Snap Peas pods are more rounded and their peas are also bigger.
Taste wise, snow peas are less sweet than snap peas. But both are tender and crisp. Also, opposite of garden peas/sweet peas, you can eat the shell of snow peas and snap peas.

Dark Meat vs White Meat
I usually cook my stir fries with dark meat (chicken thighs specifically) but for this dish I switched it up and cooked it with chicken breast! You can still do dark meat if you prefer - totally up to you.
Usually, you can use dark vs white meat interchangeably. But depending on the thickness of the chicken you may need to adjust the timing.
Basically - just make sure that the chicken is thoroughly cooked before serving!

How to make Chicken and Snow Peas Stir Fry (Step by Step)

First, gather and prepare your ingredients. You will need:
- 1 lb boneless chicken breast, sliced
- Marinade:
- 1 teaspoon cornstarch
- ¼ cup light soy sauce
- 1 teaspoon sesame oil
- 1 tablespoon rice wine vinegar
- 2 teaspoons honey
- 3 garlic, crushed
- 1 tablespoon cooking oil
- 8 ounces snow peas
- 1 tablespoon oyster sauce
- 1 teaspoon black pepper (optional)
- Salt to taste
With a knife, cut chicken in to slices. In a mixing bowl, add the chicken marinade ingredients (chicken, cornstarch, soy sauce, sesame oil, rice wine vinegar, honey). Combine well and then set it aside to marinade for at least half hour. You can marinade up to overnight but remember to put it in the fridge.

In a cooking pan or wok, add cooking oil, and let it heat up on medium high. Add garlic and allow it to cook for about a minute.

Add chicken along with all the marinade sauce, and stir fry for about 2 minutes or until chicken is no longer translucent, and immediately remove chicken from heat by placing in a big plate or bowl and set aside (try to keep sauce in pan).


Add a little more cooking oil if your pan is too dry. Then, add snow peas and stir fry for about 3-5 minutes or until the snow peas start turning bright green and tender.

Return the chicken back in to pan, and add oyster sauce, and black pepper, salt, and stir fry everything for about another 1-2 minutes or until chicken is cooked thoroughly.


Remove from heat and serve!

How to Store Leftovers
Let the stir fry cool completely, then transfer to an airtight container. Store in the refrigerator for up to 3-4 days.
Can I Freeze Chicken and Snow Peas Stir Fry?
Yes - but keep in mind that snow peas will lose some crispness after thawing. Freeze in a freezer-safe container or bag for up to 2 months. For best results, remove as much air as possible before sealing.
How to Reheat
- Stovetop (best texture): Heat a small amount of oil in a pan over medium heat. Stir fry for 2-3 minutes until hot.
- Microwave (quickest): Place in a microwave-safe dish, cover loosely, and heat in 30-second intervals until warmed through.
