Keto Ice Cream Recipe (Mason Jar)

I love eating keto in the summer because there’s plenty of amazing grilling recipes and fresh produce. The only thing I miss is ice cream. Since store bought keto ice cream is just expensive and a bit of a letdown flavor wise, I started making my own at home – hence this Keto Ice Cream Recipe!

This Keto Ice Cream is creamy and you can adjust the sweetness and flavor to your liking! This keto-friendly ice cream is so easy to make, and you don’t need an actual ice cream maker. You only need a mason jar, anything pint size or bigger, with a lid.

My favorite ice creams are chocolate and mint chocolate chip, but you can technically add anything to the base recipe. You can make it ahead of time, so you always have some in your freezer. Since it’s in a mason jar, it’s easy to grab and take to a cookout or friends house.

Can I eat ice cream on keto?

Usually, the answer is no! But of course, being on the keto diet means you have to pay attention to the carbs you’re consuming. So if you’re planning to make/eat this particular keto ice cream, then the answer is actually yes!

This Keto Ice Cream recipe makes 6 servings, and each serving is only 6g of carbohydrates – making it a low carb option!

How to make keto ice cream?

Ingredients

  • 2 cups heavy whipping cream
  • 4 tablespoons swerve, or any keto friendly sweetener
  • 2 teaspoons vanilla extract
  • 1.5 tablespoons cocoa powder
  • 4 tablespoons sugar-free chocolate chips, like Lilly’s brand
  • ¼ teaspoon peppermint extract, or 3 drops peppermint essential oil

Directions

Set out 2 mason jars and pour 1 cup of heavy cream into each one. Add 2 tablespoons of sweetener and 1 teaspoon of vanilla to each jar.

In one jar, add the cocoa powder and 2 tablespoons of chocolate chips. In the other jar, add your peppermint extract and the rest of the chocolate chips.

Put the lids on the jar and shake each jar for a couple of minutes. You want the cream to get thicker, but not quite whipped cream texture.

Place each jar in the freezer for at least 4 hours. If you remember, shake each jar about 2 hours in to help combine the chocolate chips. If not, they will generally sink to the bottom. You can always stir it together once it’s frozen and you are serving it if you forget this step.
