This Chinese Chicken Mushrooms Stir Fry is a simple recipe that makes a delicious entrée! It's made with chicken, mushrooms of your choice, scallions and more. Sometimes I add some dried red chili peppers to add an extra kick too!

Types of Mushroom to use
There are plenty of different types of mushrooms out there to choose from, so I just wanted to give you some ideas:
White button mushrooms are most commonly used in the States because they're so easy to find. Slice these up for this recipe if they are on the larger side. If they are small caps, you could actually just cook them without slicing. Or you can halve them also.
Cremino mushrooms (aka baby portobello mushrooms) are pretty interchangeable with white button mushrooms when it comes to cooking them, other than the brown color. They are actually Portobello mushrooms that were harvested prior to full maturity!
Shiitake mushrooms is a wonderful option for this dish too! If you are using fresh shiitake mushrooms (which you usually can find in your local Asian supermarket), then you will want to slice them in to thinner pieces.

Dark Meat vs. White Meat
For this recipe you can use chick breast instead of chicken thighs depending on your preference. Usually, you can use them interchangeably ad then for some recipes, depending on the thickness of the chicken you may need to adjust the timing.
Basically - just make sure that the chicken is thoroughly cooked before serving!

How to Stir Fry Chicken with Mushrooms
First, gather your ingredients:
- Marinade:
- 1 teaspoon cornstarch
- ¼ cup light soy sauce
- 1 teaspoon sesame oil
- 1 tablespoon rice wine vinegar
- 2 teaspoons honey
- 3 cloves of garlic, minced
- Stir Fry
- 1 lb chicken thigh, cut in to bite size pieces
- 2 tablespoon vegetable oil, separated
- 8 oz mushrooms, sliced to smaller pieces as needed\
- 1 tablespoon oyster sauce
- 2 scallions, cut in to 1 inch slices
- Salt, to taste
Cut the chicken in to bite sized pieces. In a mixing bowl, combine chicken with marinade ingredients and set aside. Let it marinade for at the very least 15 minutes. You can marinate up to overnight, but place in fridge if marinating over 30 mins

When ready to cook, in a wok or cooking pan, heat up 1 tablespoon vegetable oil. Then, add the chicken and stir-fry until the meat is slightly browned (about 2-3 mins). Remove from heat and set aside.

If the pan is not oily enough, you can add another tablespoon of oil. Now, add the mushrooms and stir-fry for about 3 minutes.

Add the chicken back in to the pan. Stir fry until chicken is cooked thoroughly.

Then add oyster sauce, chopped scallions and salt to taste, stir to mix well.

Remove from heat and serve!


Storage & Reheating
Storage:
- Let the stir fry cool completely before storing.
- Transfer to an airtight container and refrigerate for up to 3-4 days.
- This dish is not ideal for freezing since mushrooms can change texture after thawing, but it's possible if needed-store in a freezer-safe container for up to 2 months.
Reheating:
- Stovetop (best): Add a splash of water or chicken broth to a skillet or wok over medium heat. Stir fry until warmed through.
- Microwave: Heat in 30-45 second intervals, stirring in between, until hot. Adding a small splash of water can help prevent the chicken from drying out.

Can I use chicken breast instead of thighs?
Yes! Chicken breast works fine-just keep in mind it cooks faster and can dry out more easily. Cut into thin, even strips and stir fry just until cooked through.
What kind of mushrooms work best?

Instructions

- Cook Chicken: Heat 1 tablespoon vegetable oil in a wok or large pan over medium-high heat. Stir fry chicken until lightly browned (about 2–3 minutes). Remove and set aside.
- Cook Mushrooms: Add remaining oil if needed, then stir fry mushrooms for about 3 minutes until they start to soften.
- Combine & Finish: Return chicken to the pan, add oyster sauce, scallions, and optional dried red peppers. Stir fry 1–2 minutes until chicken is cooked through and mushrooms are tender. Season with salt to taste.
- Serve: Enjoy hot with rice or noodles.

- If using chicken breast, marinate for at least 30 minutes for more tenderness.
