This Chicken Zucchini Mushrooms Stir Fry is a simple stir fry that we like to make! We marinade the chicken and then stir fry with sliced mushrooms and zucchini, and then either serve with white rice or noodles!

If you're a fan of Panda Express's Mushroom Chicken, you may like this dish! It's got a lot of the same ingredients, however, I will definitely note that I prefer dark meat, so I use chicken thighs.
If you prefer white meat, you can cut chicken breast in to slices and make with this dish also. It's up to you!

Chicken
- I use boneless, skinless chicken thighs because they stay juicy and flavorful when stir-fried.
- You can use chicken breast instead-just slice thinly so it cooks quickly without drying out.
Zucchini
- Adds a mild, slightly sweet flavor and soaks up the savory sauce beautifully.
- Slice it in half lengthwise, then into half-moons for even cooking.
Mushrooms
- White mushrooms or cremini work well here. Slice them so they cook quickly and evenly.
- Not a mushroom fan? Try bell peppers, broccoli, or snap peas instead.
Sauces & Seasonings
- Soy sauce for umami, oyster sauce for depth, sesame oil for nuttiness, and a touch of brown sugar to balance the flavors.
- Rice wine vinegar adds brightness-don't skip it!

How to Stir Fry Chicken with Zucchini & Mushrooms (Step by Step)
First gather your ingredients. You will need:
- 1 lb boneless chicken thigh, cut bite sized
- Marinade:
- 1 teaspoon cornstarch
- ¼ cup light soy sauce
- 1 teaspoon sesame oil
- 1 tablespoon rice wine vinegar
- 2 teaspoons honey
- 2 garlic, minced
- 3 garlic, chopped
- 1 tablespoon cooking oil
- 8 ounces mushrooms, sliced
- 1 medium zucchini, cut in half lengthwise and then sliced
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1 teaspoon brown sugar

Marinate the chicken
In a bowl, mix chicken with cornstarch, soy sauce, sesame oil, rice wine vinegar, honey, and minced garlic. Marinate at least 30 minutes.

Cook the chicken
Heat oil in a wok or large skillet over medium-high. Add chicken with the marinade and stir fry about 2 minutes, until no longer pink. Remove chicken from pan (leave sauce behind).


Cook the vegetables
If needed, add a little more oil. Stir fry smashed garlic, zucchini, and mushrooms for 5 minutes, or until tender.

Bring it all together
Return chicken to the pan. Add soy sauce, oyster sauce, sesame oil, and brown sugar. Stir fry 2-3 more minutes, until chicken is cooked through and vegetables are tender.

Serve
Remove from heat and serve with rice or noodles.

Storage & Reheating
Fridge: Store leftovers in an airtight container for up to 3 days.
Reheat: Warm in a skillet over medium heat until heated through, or microwave in 30-second bursts.
Freezing: Not recommended-zucchini becomes mushy after thawing.

You can, but marinating really helps the chicken stay tender and flavorful.
What other vegetables work well in this recipe?
Bell peppers, broccoli, asparagus, or green beans are all great swaps.
Can I make this spicy?
Yes-add chili flakes, fresh sliced chilies, or a spoonful of chili oil when cooking.

- Add a little more oil if needed. Stir fry smashed garlic, zucchini, and mushrooms for about 5 minutes, until tender.
- Return chicken to the pan. Add soy sauce, oyster sauce, sesame oil, and brown sugar. Stir fry 2–3 minutes until chicken is cooked through and vegetables are tender.
- Serve hot with rice or noodles.

Hi there, other types of white vinegar will work too... like White Vinegar, Apple Cider Vinegar, as example. But I've actually forgotten to use vinegar before too, and it still turned out pretty yummy 🙂
