Chicken Portobello Mushrooms Stir Fry

Chicken Portobello Mushrooms Stir Fry – this simple stir fry makes a delicious entree! It’s made with chicken, baby portobello mushrooms, scallions and more. I prefer to also add some dried red chili peppers to add an extra kick too!

Portobello Mushrooms vs Cremini Mushrooms

Technically we are using cremini mushrooms, however, the

Portobello mushrooms are the mature version of cremini mushrooms harvested when they’re fully grown. So often times, Cremini shrooms are also known as baby portobello mushrooms. Cremini are about the size of the white button mushrooms, while Portobello can be as wide as the palm of your hand.

Cremino mushrooms are pretty interchangeable with white button mushrooms when it comes to cooking them, other than the brown color. While, Portobello shrooms are slightly more dense and less moist compared to cremino since it’s had more time to grow and lose some of moisture.

Dark Meat vs. White Meat

For this recipe you can use chick breast instead of chicken thighs depending on your preference. Usually, you can use them interchangeably ad then for some recipes, depending on the thickness of the chicken you may need to adjust the timing.

Basically – just make sure that the chicken is thoroughly cooked before serving!

How to make Chicken Portobello Mushrooms?

First, gather your ingredients:

  • 1 lb chicken thigh
  • 8 oz baby portobello mushrooms
  • 2 scallions, cut in to 1 inch slices
  • 2 tbsp cooking oil of choice
  • 1 tbsp soy sauce
  • 1/2 tbsp corntarch
  • Salt, to taste
  • Dried red chili peppers, to taste

Cut the chicken in to bite sized pieces.  In a mixing bowl, combine chicken with the cornstarch and soy sauce, and set aside. Let it marinade for about 15 mins.

This is the perfect time to slice up your portobello mushrooms if you haven’t already.

In a wok or cooking pan, heat up your cooking oil of choice and if you choose to, add the dried red chili peppers. Stir-fry for about 30 seconds.

Add the chicken and stir-fry until the meat is slightly browned (about 2-3 mins).

Add the mushrooms and stir-fry for about 3 minutes, and then add the scallions. Stir fry everything for about one more minute or until mushrooms are tender.

Give it a taste and add salt as desired.

Move to a plate and serve!

Ingredients
