Chicken Shiitake Mushrooms Stir Fry – marinated tender chicken stir fried with sliced shiitake mushrooms and onions in a tasty sauce!
Dark Meat vs. White Meat
I usually cook my stir fries with dark meat (chicken thighs specifically) but for this dish I switched it up and cooked it with chicken breast! You can still do dark meat if you prefer – totally up to you.
Usually, you can use dark vs white meat interchangeably. But depending on the thickness of the chicken you may need to adjust the timing.
Basically – just make sure that the chicken is thoroughly cooked before serving!

Shiitake Mushrooms
One of my favorite mushrooms to use in Asian recipes! Shiitake originates from China and Japan, and is super flavorful. They’re more dense, similar to Portobello mushrooms, and have an earthy, almost smoky flavor compared to the other mushrooms.
I commonly use dried shiitake mushrooms in soups to add a delicious flavor to the broth, but you can also use fresh shiitake mushrooms for stir frying or any other dishes.

How to cook Chicken Shiitake Mushrooms Stir Fry
First, gather your ingredients:
- Marinade:
- 1 tbsp cornstarch
- 2 tbsp light soy sauce
- 2 tbsp rice wine (michiu)
- 2 tsp brown sugar
- Stir Fry
- 1 lb chicken breast, sliced
- 2 tbsp vegetable oil, separated
- 8 oz fresh shiitake mushrooms, sliced
- 1/2 medium onion, sliced
- 1 tbsp oyster sauce
- Salt, to taste
- Chopped green onions (optional/garnish)
Combine chicken with marinade ingredients and set aside. Let it marinade for at the very least 15 minutes. You can marinate up to overnight, but place in fridge if marinating over 30 mins.
While you wait for the marinade, you can sliced the onion and shiitake mushrooms.
When ready to cook, in a wok or cooking pan, heat up 1 tbsp vegetable oil. When oil is hot, add sliced onions and stir fry about a minute, and then add chicken. Stir fry together until the meat is slightly browned (about 2-3 mins). Remove from heat and set aside.
If the pan is not oily enough, you can add another tbsp of oil. Add shiitake mushrooms in to cooking pan or wok. Stir fry for a couple of minutes or until mushrooms soften.
Return chicken back in to wok or pan. Add oyster sauce and stir fry to mix well until chicken is cooked thoroughly.
Remove from heat and optionally sprinkle with chopped green onions and serve!
Just look how tasty this looks – I made enough for two meals… but I ate it all in on sitting 😀

Hi I have made chinese chicken with shitake mushrooms for myself, easy and so delicious. if I was to make it for dinner party of 6 to 8 are there side dishes you would recommend. thanks

Thank you! I'm glad you enjoyed it! I guess that depends if you are serving like family style or just some veggie side dishes. For veggie side dishes, you can stir fry green beans, or bok choy, cabbage, or maybe a Chinese cucumber salad.
If you are going to serve it family style with lots of dishes, then you can add some other protein such as: Salmon With Green Onions, Garlic, Soy Sauce, Shrimp with Asparagus Stir Fry, or Shrimp and egg stir fry.
