I love stir frying snap peas because they are sweet, juicy, and have this crunch to them! When cooked with shiitake mushrooms, it adds to the delish flavor! Here’s how to make Snap Peas Shiitake Mushrooms Stir Fry!

What are Snap Peas?

Snap peas are also known as sugar snap peas. They are actually a cross between snow peas and garden peas. You can eat the whole pod similar to snow peas. It has a crunchy texture, and mildly sweet flavor.

You can actually eat snap peas cooked or raw – Other than stir frying them, I absolutely love eating them with some ranch dip! Next time you are putting together a veggie tray, be sure to add snap peas to the mix!

Are Snap Peas healthy?

Yes, snap peas are very healthy for you. They provide fiber and protein. They’re also a great source of vitamins and minerals such as vitamin C, iron, and potassium. Read more about snap peas health benefits here!

Shiitake Mushrooms

One of my favorite mushrooms to use in Asian recipes! Shiitake originates from China and Japan, and is super flavorful. They’re more dense, similar to portobello mushrooms, and have an earthy, almost smokey flavor compared to the other mushrooms.

I commonly use dried shiitake mushrooms in soups to add a delicious flavor to the broth, but you can also use fresh shiitake mushrooms for stir frying or any other dishes.

How to make Snap Peas Shiitake Mushrooms Stir Fry

First gather your ingredients:

  • 8 oz Snap Peas
  • 8 oz Shiitake Mushrooms, sliced
  • 2 tsp minced garlic
  • 1 tbsp cooking oil
  • Salt, to taste

This is optional, but we usually break the ends of the snap peas and pull it down the side of the pods to remove the string. The strings can be a little tough, so it just removes that from the snap peas. If you haven’t already, also slice the shiitake mushrooms, and mince your garlic.

In a cooking pan or work, heat cooking oil over medium high heat. Add shiitake mushrooms and garlic. Stir fry everything for about 2 minutes, and then remove from heat and set aside.

If cooking pan is too dry, add another tbsp of cooking oil. Add snap peas to the cooking pan / wok and stir fry for about 2 minutes, or until snap peas are turning bright green.

Add mushrooms and garlic back and stir fry together 2-3 minutes until both are cooked thoroughly and tender. But try not to cook it too long or else the snap peas could get too soft.

Add salt to taste, stir to mix well, and then remove from heat and serve!
