How to cook Tomato Fried Rice (Step by Step)

First gather your ingredients:
- 2 tablespoon cooking oil, separated
- ½ cup frozen mixed veggies (corn, peas, carrots, etc.)
- 1 medium tomato, chopped
- 2 eggs, lightly beaten
- 2 cups of cooked rice
- 5 crushed garlic, minced
- 3 tablespoon soy sauce
- 2 tablespoon ketchup
- 1 teaspoon sesame oil
- ¼ teaspoon sugar
- Salt, to taste
- Green onions, chopped (optional)


In a large nonstick pan or wok, add 1 tablespoon of oil over medium-high heat. Add beaten eggs and allow it to start solidifying before scrambling, and then remove from heat and set aside.


Add another tablespoon of oil, and then frozen mixed veggies in to wok or cooking pan, and cook for about 2 minutes, or until vegetables begin to soften, stirring occasionally.


Then add the chopped tomatoes, and allow it to cook, tomato juice will be released. Continue to let it cook while stirring until the juice starts to evaporate.


Add cooked rice and stir to mix well, eggs, and stir to mix well.

Add minced garlic, soy sauce, sesame oil, ketchup, sugar, and salt to taste, and stir fry everything to blend together. Cook for about 3 more minutes.

Sprinkle chopped green onions (optional) and mix well.

Remove from heat and serve!
