I love summer! I love the fun activities such as beaches, lakes, swimming pools, and you can’t forget all the delicious veggies that thrive in this season… for example, Summer Squash! This Shrimp and Summer Squash Stir Fry dish is yummy and easy to make! I love the colors of it, just look at it!

What’s pretty awesome about this Shrimp and Summer Squash Stir Fry also is that summer squash is pretty damn nutritious. Not only is it low in carbs and calories, it’s also high in vitamin C, folate, iron, and more good stuff your body loves! [More info here.]

Ingredients

  • 2 tablespoons cooking oil/fat of choice
  • 1/2 lb of shrimp, shell removed and deveined
  • 1 large summer squash, cut into rounds and then halved
  • 6 scallions, cut in to about an inch
  • Salt, as desired
Summer Squash

Instructions

Place skillet over high heat, and add 1 tbsp oil. Add the shrimp and saute for one minute. Remove and set aside.

Shrimp

Add the remaining oil to the skillet, and add the summer squash and scallions. Stir fry for one minute.

Add the shrimp and salt as desired, and stir fry for a few more seconds or until shrimp is fully cooked.

Remove from heat, and serve!
