Got a little bit of leftover beef, pork, shrimp, veggies - but not enough for a full meal?
This leftover stir fry noodles recipe is one of my favorite ways to turn random leftovers into something new and honestly… even better than the original!

Instead of doing leftover fried rice (which I usually do), I had no rice this time… so I cooked up some noodles and stir fried everything together and it turned out SO good.
If you've ever stared into your fridge thinking "what do I even do with all this?" - this is it.
What This Recipe Is
This isn't a strict recipe - it's more of a method.
It's:
- flexible
- quick
- perfect for using up leftovers
- great when you don't have rice
You can mix different proteins, veggies, and sauces depending on what you already have.
Ingredients (Flexible!)
Noodles
- Any noodles you have (lo mein, ramen, spaghetti, rice noodles)
Leftover Proteins (mix and match!)
- Beef (I used some leftover hibachi beef)
- Pork (From my pork + mushroom stir fry)
- Shrimp (Leftover from shrimp and green beans stir fry)
- Chicken or whatever you have leftover!
Vegetables
- Green beans
- Mushrooms
- Any leftover veggies work here
Sauce (simple base)
- 2-3 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 2-3 cloves garlic, minced
Optional:
- Chili oil
- Sesame oil
Note - if your leftovers are very saucy and flavorful already, you might just skip all this!
How to Make Leftover Stir Fry Noodles
Cook your noodles
According to package instructions. Drain and set aside.

Heat oil + garlic
In a pan or wok, heat a little oil and sauté garlic until fragrant.

Add your leftovers
Toss in your leftover proteins and veggies.
Let them heat through - and even get a little crispy.
Add noodles
Throw in your cooked noodles and toss everything together.

Add sauce if needed
Pour in soy sauce + oyster sauce and stir fry until everything is evenly coated.

Finish it off
Add a drizzle of sesame oil or chili oil if you want extra flavor.

Pro Tips
- Mixing proteins = more flavor
Don't be afraid to combine beef, pork, shrimp, etc. - Let things crisp a little
Don't just reheat-give it a quick stir fry so it tastes fresh again - Add a splash of water or stock if needed
Helps loosen everything up if it feels dry - Taste and adjust
Since leftovers already have seasoning, adjust soy sauce as needed

Leftover Stir Fry Noodles is an easy, flexible way to turn random leftovers into a brand new meal! Toss together any leftover beef, pork, shrimp, or veggies with noodles and a simple savory sauce for a quick and satisfying dish.
Ingredients
- 8 oz noodles (lo mein, ramen, spaghetti, or rice noodles)
- 1-2 cups leftover protein (beef, pork, shrimp, chicken, or mix)
- 1-2 cups vegetables (green beans, mushrooms, cabbage, carrots, etc.)
- 1 tablespoon oil
- 2-3 cloves garlic, minced
- 2-3 tablespoons soy sauce (adjust to taste)
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil (optional)
- Chili oil, to taste (optional)
- Splash of water or stock (if needed)
Instructions
- Cook noodles
Cook noodles according to package instructions. Drain and set aside. - Heat oil and garlic
In a large pan or wok, heat oil over medium-high heat. Add garlic and sauté until fragrant. - Add leftovers
Add your leftover proteins and vegetables. Stir fry for a few minutes until heated through and slightly crisp. - Add noodles
Add the cooked noodles to the pan and toss to combine. - Add sauce
Pour in soy sauce and oyster sauce. Stir fry until everything is evenly coated and heated through. - Finish
Add sesame oil and chili oil if using. Toss and serve hot.
Notes
- This recipe is very flexible - use whatever leftovers you have on hand
- Since leftovers are already seasoned, adjust soy sauce to taste
- Mixing different proteins adds extra flavor and texture
- Add a splash of water or stock if the noodles seem dry
- Let the ingredients crisp slightly to bring back fresh stir fry flavor
