Christmas cookies is something a lot of us look forward around this time of the year, but can you eat all the cookies you want and not hate yourself?  Well, that probably depends on how much cookies you want, but why not try making some paleo cookies and at least feeling a little bit better about yourself!

I don’t know about you, but for me, when I hear “thumbprint” cookies I think of a cookie with jam in the middle.  I have never thought of trying a chocolate one until I saw this recipe!  This thumbprint cookie is made up of coconut flour, cocoa powder, and a couple more ingredients.

This yummy cookie is packed with nutrition!  It consists of coconut flakes, cranberries, walnuts and honey.  I’m thinking about trying it with different types of nuts when I have time.

The main ingredient here is almond butter!  The blogger also includes a homemade almond butter recipe for those of you that want to take the extra step in making a delicious paleo cookie!

All right, this one is not exactly a cookie, but why not eat it like one!  This double layer fudge consists of almond butter, shredded coconuts, and some other paleo ingredients.

Elana’s Pantry: Paleo Coconut Macaroons

Not only is this a yumm recipe, it is also very easy (my favorite!)!  It only requires 4 ingredients: Eggs, Honey, Sea Salt, and Coconut Flakes.  So if you don’t cook often, you can try this one out and impress your guests by making this at your next Christmas party!
