Luckily, when it's cooked right, asparagus is simple, flavorful, and one of the easiest vegetables to love. This oven roasted asparagus recipe is my go-to method: lightly seasoned, tender but not soft, and roasted just enough to bring out its natural flavor.
Why Oven Roasted Asparagus Works
Roasting asparagus in the oven gives it a slightly crisp exterior while keeping the inside tender. It's hands-off, forgiving, and much harder to mess up than stovetop methods. This is the kind of veggie side dish you can throw together on a weeknight-but it's also good enough for a holiday table.

How to cook Oven Roasted Asparagus (Step by Step)
First, gather your ingredients:
- 1 lb asparagus
- 3 tablespoons olive oil
- 1 teaspoon sea salt
- Β½ teaspoon garlic powder (optional)
Start by preheating your oven to 400Β°F.
While the oven heats, trim the tough ends off the asparagus. If you like, you can peel the lower portion of thicker stalks, though I usually skip this step unless the asparagus is especially thick.

Line a baking sheet with foil for easy cleanup (optional). If you don't use foil, lightly grease the pan to prevent sticking.
To season, you have two options. You can place the asparagus directly on the baking sheet and drizzle it with olive oil, then season with salt and garlic powder. Or-my preferred method-toss the asparagus with olive oil in a bowl first, then season and transfer it to the pan. This helps ensure everything is evenly coated.
Spread the asparagus out in a single layer and roast for 10-15 minutes, depending on thickness and how tender you like it. I usually find 15 minutes to be perfect in my oven, but start checking around the 10-minute mark. Every oven is a little different.

Once tender and lightly browned, remove from the oven and serve immediately.

Storage & Reheat
To store:
Let the asparagus cool completely, then store it in an airtight container in the refrigerator for up to 3 days.
Freezing is not recommended, as roasted asparagus tends to become mushy once thawed.
To reheat:
For best texture, reheat asparagus in a skillet over medium heat for a few minutes until warmed through. You can also reheat it in the oven at 375Β°F for 5-7 minutes. The microwave works in a pinch, but the asparagus will be softer.

Why is my roasted asparagus mushy?
This usually happens when asparagus is overcooked or overcrowded on the pan. Make sure the spears are spread in a single layer and start checking for doneness around the 10-minute mark.
Should I peel asparagus before roasting?
Most of the time, no. If the asparagus is very thick or woody near the bottom, peeling the lower portion can help, but trimming the ends is usually enough.
Do I need to line the pan with foil?
No, it's optional. Foil makes cleanup easier, but you can also roast directly on a greased baking sheet.
Can I add other seasonings or toppings?
