- Optional: a few drops of toasted sesame oil, for finishing
Bring a large skillet or pot of salted water to a boil. Add broccolini and cook for 2-3 minutes, until bright green and just starting to turn tender.

Drain well and set aside.
Optional tip for extra tenderness:
After draining, loosely cover the broccolini for 1-2 minutes to let it gently steam from residual heat.

Heat olive oil in a skillet over medium heat. Add garlic and cook for 30-60 seconds, just until fragrant (do not brown).
Stir in the chili oil or chili paste, if using.
Add broccolini and salt to taste. Stir-fry for 3-4 minutes, tossing until the broccolini is evenly coated, tender, and still vibrant green.

Storage:
Store leftover broccolini in an airtight container in the refrigerator for up to 3 days. The texture is best the first day, but it will still reheat well.
Reheating:
Reheat gently in a skillet over medium heat with a small splash of water to help re-steam the stalks. Cook just until warmed through.
You can also microwave in short 20-30 second bursts, loosely covered, but stovetop reheating gives the best texture.
Tip: Avoid reheating too long, as broccolini can turn soft and lose its bright green color.
