Banana Walnut Coconut Cookies

I’m not huge on baking, but sometimes I like to treat my co-workers and have a sweet surprise waiting for them when they walk into my office. These Banana Walnut Coconut cookies are perfect for that! They’re not too rich or sweet like many cookies can be, and they’re Paleo and gluten free, so they’re healthy as far as baked goods go!

They’re also pretty easy to make; I got to use my new standing mixer for the first time while making these, and I was thrilled that it did most of the work for me. So go ahead — treat yourself and your friends with these yummy cookies!

Yield: ~16 cookies
Prep Time: 20 minutes
Cook Time: 30 minutes (2 batches x 15 minutes each)

Ingredients

  • 2 cups almond flour
  • 1 cup coconut flour
  • 1/2 teaspoon sea salt
  • 1 teaspoon cinnamon
  • 3/4 organic coconut flakes (unsweetened)
  • 3/4 walnut chips
  • 3/4 cup coconut palm sugar
  • 1/4 cup grass-fed butter at room temperature
  • 1 large egg and one large egg white
  • 1 vanilla bean
  • 1 very ripe banana, mashed

Directions

  1. In a large bowl, stir together almond flour, coconut flour, baking soda, salt and cinnamon. Once combined, add coconut flakes and walnut chips.

  1. In a separate bowl, add coconut palm sugar and butter. Cream the mixture using either a standing mixer or electric hand mixer. Add the egg and egg white, as well as the seeds from the vanilla bean pod (dispose of pod). Mix again until combined. Add the mashed banana and mix once more.

  1. Combine wet and dry ingredients and mix just until combined. Cover the bowl and place it in the refrigerator for 30-45 minutes to allow it to set.

  1. Preheat oven to 350°.

  1. Drop cookies on to a baking sheet and bake for 14-16 minutes, rotating cookie sheet halfway though.

This must be absolutely delicious. Fresh bananas ad walnuts is my favourite fruit and nut combination, therefore I am sure these cookies must be fantastic as well.
