I love a delicious and easy casserole dish, and this Keto Chicken Broccoli Casserole is exactly that. This casserole is creamy, and the broccoli is roasted perfectly with the cheddar cheese – super tasty! Here’s how to make chicken broccoli cheese casserole!

This dish is so perfect when you have leftover chicken around, by the way. For me, I had rotisserie chicken from another meal, and so it was perfect for me to shred the chicken breast for this dish. Of course, if you do not have leftover chicken, you can also make your own.
Ingredients
- 1.5 lb broccoli, cut in to florets
- 2 tbsp butter
- 8 oz cream cheese
- 1/2 cup heavy whipping cream
- 1 1/2 cups cheddar cheese shredded (separate1 cup, 1/2 cup)
- 2 cloves garlic, minced
- 1 teaspoon garlic powder
- 1/2 tsp paprika
- 1/4 tsp oregano
- 1/2 tsp parsley
- 1 tsp salt
- 2 cups, shredded chicken
- Optional – Slice of bacon, cooked and chopped
Instructions
Preheat your oven to 350°F.
Add butter and minced garlic to a pot and let it cook until aromatic. Then, add heavy cream, cream cheese and let it melt. Add in salt, paprika, oregano, parsley, and stir in 1 cup of shredded cheese. Blend well, and then place aside.
In a casserole dish, add a layer of shredded chicken to the bottom of the dish.
Pour the sauce over chicken and use a spatula to even it out to a layer.
Add broccoli to the casserole evenly.
Sprinkle 1/2 cup of shredded cheese evenly on top of the broccoli. If you choose to add bacon, sprinkle the chopped bacon. Or you can be like me and forgot you had bacon, and then sprinkle it at the end too… 🙂
Bake for 30 minutes or until the top is browned. Remove from oven and let it cool down before serving!
