What are King Oyster Mushrooms?
King Oyster Mushrooms are large mushrooms from the oyster mushroom family - it is white, smooth, and have an elongated stem. These shrooms are very firm, some folks even describe it as 'crunchy'.
There are several ways to prepare king oyster mushrooms for cooking, some dishes call for cutting it side ways, and some length wise.
Where to buy King Oyster Mushrooms?

You can buy king oyster mushrooms in your local Asian super market. Often times you can also find it in organic or natural grocery stores such as Whole Foods.
If all else fails, you can try growing your own! You can find King oyster mushrooms growing kits on Amazon, for example!
Cutting King Oyster Mushroom
For this recipe, we will cut the king oyster mushrooms in to chunks. f they are on the larger size, you can cut them vertically first (length wise) and then cut them in to ½ to 1 inch width. Or you can do this very cool cutting style called 'roll cutting'.
Roll cutting aka oblique cutting is a technique where you can cut long veggies like zucchini, carrots, Chinese eggplants, in a way that will expose the most amount of surface are - this makes it cook faster and absorbent of sauces/spices.

How to cook Beef Oyster Mushroom Stir Fry (Step by Step)
First gather your ingredients:
- 1 lb beef, sliced
- Marinade:
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 1 teaspoon sugar
- 3 cloves of garlic, roughly chopped
- 4 king oyster mushrooms, cut in to chunks
- 1 tablespoon oyster sauce
- Salt to taste
- Chopped green onions (optional)
Combine beef and marinade/sauce ingredients in a large bowl or zip lock bag. If you are about to cook it, let it marinade at the very least 15-30 minutes. If you are making this ahead, cover and refrigerate for 30 minutes before cooking.
In a wok or large nonstick cooking pan, heat cooking oil over medium-high heat. When the oil is hot, add garlic and stir fry for about a minute.
Add beef, and stir fry until mostly browned. Remove the beef from cooking pan and set aside.

If the cooking pan is dry, add some cooking oil. Add king oyster mushrooms and stir fry everything together until king oyster mushrooms are cooked and tender.
Add beef back in to to cooking pan.

Add oyster sauce and chopped green onions and stir fry everything for about 1-2 minutes or until steak is your desired tenderness (we like medium).

Remove from heat and serve!


Storage & Reheat
- Fridge: Store in an airtight container for up to 3 days.
- Reheat:
- Stovetop (best): Stir fry quickly over medium heat until warmed through.
- Microwave: Heat in 1-minute bursts, stirring in between.
- Tip: Add a splash of water or broth when reheating to keep beef tender and sauce silky.

Can I use another mushroom?
Yes - shiitake, button, or cremini mushrooms work, but king oyster mushrooms give the meatiest texture.
What kind of beef works best?
Flank steak, sirloin, or ribeye are all good choices. Just slice thinly against the grain.

Instructions
- Marinate the Beef
In a large bowl or zip-top bag, combine sliced beef with soy sauce, sesame oil, cornstarch, and sugar. Mix well and marinate for at least 15–30 minutes (or refrigerate up to 30 minutes if prepping ahead). - Cook the Garlic & Beef
Heat oil in a wok or skillet over medium-high. Add garlic and stir fry for about 1 minute. Add beef and stir fry until mostly browned. Remove from the pan and set aside. - Cook the Mushrooms
If the pan is dry, add a little more oil. Add king oyster mushrooms and stir fry until tender. - Combine & Finish
Return beef to the pan, add oyster sauce, green onions, and a pinch of salt. Stir fry for 1–2 minutes, until beef reaches desired doneness (we like medium). - Serve
Remove from heat and enjoy hot with rice or noodles.
Notes
- Slice beef against the grain for tenderness.
- King oyster mushrooms are firm and meaty — roll cutting them exposes more surface area for soaking up sauce.
- Substitute with shiitake or button mushrooms if king oyster isn’t available.
