I made this dish before our honeymoon and almost forgot to share it! Asparagus is often served as a side dish, but it also works wonderfully in a noodle stir fry. Cut into bite-sized pieces, it's easy to toss with the chicken and noodles so you get a little of everything in each bite.
The sauce combines soy sauce, oyster sauce, garlic, and sesame oil for a savory coating. Cooking the chicken and asparagus separately before combining everything helps keep the chicken tender and gives you more control over the asparagus texture.

What Noodles Should You Use?
Dried lo mein noodles work well for this recipe, and spaghetti is an easy substitute. Cook them just until al dente, since they'll cook a little more when tossed in the pan with the sauce. I used you mian (油麵) this time but often times also use Wu Mu Dry Noodles.

Fresh wheat noodles are another option. Follow their package directions, as some need boiling while others only need loosening before going into the pan. Keep in mind that fresh and dried noodles weigh differently because of their water content - you'll need more fresh noodles by weight for a similar amount of cooked noodles.
Have your other ingredients ready before draining the noodles so they don't sit around and stick together.
Chicken Breast or Chicken Thighs?
I used chicken breast for the version pictured here. Slice it thinly across the grain into bite-sized pieces so it cooks quickly and is easy to eat with the noodles.
Chicken breast can dry out if overcooked, so remove it from the pan once it's cooked through. Return it at the end, just long enough to toss with the noodles and sauce.
You can also use boneless, skinless chicken thighs if you prefer dark meat. They're a little more forgiving during stir frying.
How to Prepare the Asparagus
Trim off the tough, woody ends and cut the asparagus into approximately 2-inch pieces.

The thickness of your asparagus makes a difference in cooking time. Thin stalks cook quickly, while thicker ones may need a splash of water and a brief moment covered to soften.
For especially thick asparagus, slice the stalks diagonally or halve them lengthwise before cutting them into shorter pieces. Aim for asparagus that's tender but still has a little bite - it will continue cooking when you add the noodles.
How to Make Chicken Asparagus Noodle Stir Fry
Marinate the chicken
Mix the sliced chicken with soy sauce, cornstarch, and sesame oil. Set it aside while you prepare the remaining ingredients.

Prepare the noodles and sauce
Cook the noodles according to the package directions, just until al dente, and drain.
In a small bowl, mix the soy sauce, oyster sauce, water or chicken broth, sesame oil, optional sugar, and pepper.
Cook the chicken
Heat avocado oil in a large skillet or wok over medium-high heat. Add the chicken in a single layer and cook, stirring occasionally, until cooked through. Remove from heat and set aside.
If your pan is crowded, cook the chicken in batches.

Stir fry the asparagus
Add a little more oil if needed, then add the asparagus. Stir fry until crisp-tender. If the stalks need help softening, add a splash of water and cover briefly.
Add the garlic and stir fry for about 30 seconds.

Toss everything together
Return the chicken and its juices to the pan. Add the noodles and sauce, then toss until everything is hot and evenly coated.
If the noodles look dry or are difficult to toss, add water a tablespoon at a time to loosen them.

Remove from heat and serve!

Tips for Making This Stir Fry
- Prep everything first. The cooking moves quickly once the pan is hot.
- Use a roomy pan. You'll need space to toss the noodles without spilling them.
- Don't overcook the noodles. Slightly firm noodles hold up better during the final toss.
- Add garlic after the asparagus. This keeps it from burning while the asparagus cooks.
- Taste before adding extra soy sauce. Both soy sauce and oyster sauce contribute salt, and the amount varies by brand.

Storage and Reheating
Store leftover chicken asparagus noodles in an airtight container in the refrigerator for up to 3-4 days. Refrigerate within 2 hours of cooking.
On the stovetop: Add the noodles to a skillet with a splash of water. Warm over medium heat, gently tossing until heated through. Add more water a little at a time if the noodles stick or the sauce looks dry.
In the microwave: Place a serving in a microwave-safe bowl, add a splash of water, and cover loosely. Heat in short intervals, stirring between each, until hot throughout.
The asparagus will soften a little when reheated. Warm everything just long enough to heat through so the chicken breast doesn't dry out.
