Gingerbread cookies! One of the most Christmassy (probably not a word…) cookies I can think of! This recipe of Gingerbread cookies by The Paleo mom is perfectly crisp outside and soft on the inside. If you like, you can also decorate it with chocolate chips, or some cookie frosting!
Sometimes you still want the simpler cookies. Or you want to make one type of cookie and then create different varieties of it. This simple Paleo “Sugar” cookies by The Healthy GF Life recipe is perfect for that! The Healthy GF Life also includes some optional things you can do to the original recipe such as making it chocolate sugar cookies!
This Paleo thumbprint cookies recipe by Lexi’s Clean Kitchen is a great Christmas cookie treat! It’s made with almond flour, honey, apple sauce, jam, and more! This gives you the chance to either make some jam (check out PaleOMG’s Raspberry Blueberry Jam) or buy some good natural jam at the store instead if you’d like!
Shortbread cookies are also a well known type of Christmas cookie. This Paleo Maple Shortbread recipe by The Clothes Make the Girl keeps it simple with only 5 ingredients and is coconut flour based. Another note: It is also AIP-Friendly!
Last but not least, a Chocolate Pistachio Biscotti recipe by Paleo Spirit! This recipe is actually both Paleo and Vegan. It calls for pistachios, almond flour, and coconut flour, and is nicely crunchy! As I am describing this, I am getting hungrier and hungrier…You may also like...
