King oyster mushrooms are one of my favorite ingredients to cook with. They're firm, meaty, and soak up seasonings beautifully, which makes them perfect for quick stir fries like this King Oyster Mushroom Pork Stir Fry. Thinly sliced pork loin cooks in just minutes, and the mushrooms add a hearty, satisfying bite that feels almost like a second protein.

About the Ingredients
King Oyster Mushrooms
King oyster mushrooms (杏鮑菇) have a thick, meaty stem and a mild, savory flavor. When stir-fried, they stay firm and slightly chewy while soaking up all the seasonings - which makes them perfect for this dish. You can usually find them at Asian supermarkets, and many natural or organic grocery stores (like Whole Foods) carry them too.

There are a few different ways to cut them depending on the recipe - some dishes call for slicing lengthwise, others crosswise. For this stir fry, we'll slice them into 2-inch rounds like this:

Pork Loin
Pork loin slices cook quickly and stay tender when marinated with cornstarch and soy sauce - a simple velveting method used in many Chinese stir fries. You can also use pork shoulder or even thinly sliced pork belly for a richer version.
Garlic
Fresh crushed garlic is the foundation of aroma in this dish. Since the cooking is fast, garlic infuses the oil and flavors both the pork and mushrooms.
Soy Sauce
Adds savory umami and seasons the pork without overpowering the natural flavor of the mushrooms. Light soy sauce works best here.

Cornstarch + Water (Velveting Mixture)
Coating the pork in a light cornstarch slurry keeps it tender, prevents drying out, and helps it brown slightly during stir-frying.
Green Onions
Sliced into 2-inch pieces, green onions add freshness and a mild sweetness that complements the mushrooms.
Cooking Oil
Any neutral or light-flavored oil works - vegetable, canola, avocado, or peanut oil. Olive oil is listed in your recipe card and works too, though not traditionally used for Chinese stir fry.
Sea Salt
Season to taste at the end - especially helpful since mushrooms absorb seasoning differently than pork.
How to Stir Fry King Oyster Mushroom Pork (Step by Step)
First gather your ingredients:
- 1 lb of pork loin, cut in to slices
- 1 tablespoon of cornstarch mixed with 2 tablespoon of water
- 1 tablespoon of soy sauce
- 4 cloves of garlic, crushed
- 1 tablespoon cooking oil
- 4 green onions, cut in to 2 inches
- 6 king oyster mushrooms, cut in to 2-inch slices
- Sea salt, as desired

Instructions
Mix the slices of pork in the cornstarch water mixture, along with soy sauce. Allow to marinade for 30 minutes.
Heat oil in frying pan at high. Cook sliced pork loin and crushed garlic in the oil and stir fry for about 1 minute or until mostly browned.

Add the green onions and stir fry for another minute and remove from heat.

In the same pan, if it is dry add a little more oil, and then add king oyster mushrooms and stir fry for about 5 minutes until is tender.

Return the garlic and pork loin to frying pan and cook for about 1 minute. Sprinkle with sea salt as desired, and stir fry for about 1 more minute or until meat is cooked thoroughly.

Remove from heat and serve!

Storage & Reheat
Storage:
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Mushrooms release moisture over time, so expect a little extra sauce at the bottom - that's normal.
Reheat:
Reheat in a skillet over medium heat for 2-3 minutes until warmed through.
You can also microwave it for 1-1½ minutes, but a pan gives the best texture for both the pork and mushrooms.

FAQ
Can I use a different cut of pork?
Yes - pork loin, shoulder, or thinly sliced pork belly all work well. Just make sure the slices are thin so they cook quickly.
Can I substitute the pork?
Definitely. This recipe is also delicious with chicken breast, chicken thighs, or thinly sliced beef.
Do I have to marinate the pork?
The quick cornstarch + soy sauce marinade helps the pork stay tender and gives it a smoother texture. You can skip it in a pinch, but the result won't be as silky.
Can I add vegetables to this stir fry?
Yes! Bell peppers, snow peas, baby bok choy, and broccoli all work great. Just stir fry them after the pork and before the mushrooms, adjusting cook time as needed.
Do king oyster mushrooms shrink when cooked?
They shrink only slightly compared to other mushrooms and stay firm and "meaty," which is why they work so well in stir fries.
Is this dish gluten-free?
Use a gluten-free soy sauce (like tamari) and it can be made gluten-free.
