King Oyster Mushrooms
King Oyster Mushrooms are large mushrooms from the oyster mushroom family – it is white, smooth, and have an elongated stem. These shrooms are very firm, some folks even describe it as ‘crunchy’.
There are several ways to prepare king oyster mushrooms for cooking, some dishes call for cutting it side ways, and some length wise. Here’s some delicious Oyster Mushrooms Recipes for you to try:
You can buy king oyster mushrooms in your local Asian super market. Often times you can also find it in organic or natural grocery stores such as Whole Foods.

Cutting King Oyster Mushroom
For this recipe, we will cut the king oyster mushrooms in to chunks. f they are on the larger size, you can cut them vertically first (length wise) and then cut them in to ½ to 1 inch width. Or you can do this very cool cutting style called ‘roll cutting’.
Roll cutting aka oblique cutting is a technique where you can cut long veggies like zucchini, carrots, Chinese eggplants, in a way that will expose the most amount of surface are – this makes it cook faster and absorbent of sauces/spices.

Gochugaru (Korean Chili Powder)
Gochugaru (고춧가루) or Korean chili powder is a vibrant red pepper powder made from sun-dried Korean chili peppers (gochu). The name itself comes from the Korean words "gochu" (chili pepper) and "garu" (powder).
This spice is not just spicy like regular chili powder. It also has a combination of smokey, fruity (slightly sweet from the pepper), and of course the spice! Definitely a very flavorful chili powder I recommend having in the kitchen pantry.
You can find it in your local Asian supermarket or online!
Furikake seasoning
Furikake (ふりかけ) is a Japanese multi-purpose seasoning that you can sprinkle over cooked rice, or anything actually, for delicious flavor!
It contains dried seasweed (nori) which adds a savory umami flavor, sesame seeds which adds a nutty flavor and a little bit of crunchiness, salt, sugar, and sometimes other ingredients like bonito or chili flakes depending on which furikake seasoning you get.
Though initially it is made for just rice, I love sprinkling this on... almost anything. Rice, noodles, and yes, how about them king oyster mushrooms!
You can find it in most Asian supermarkets, or even online on Amazon!
If you don't have this seasoning, worry not! You can skip it complete, or add sesame seeds and nori flakes by itself.
How to make Air Fryer Gochugaru King Oyster Mushrooms

First, gather your ingredients:
- 4 king oyster mushrooms, cut into 1-inch chunks
- 1 tablespoon avocado oil (or other high smoke point oil, see notes)
- 1 tablespoon gochugaru (Korean chili powder)
- 2 teaspoon furikake seasoning
- Salt, to taste
Preheat: Preheat your air fryer to 400°F (200°C).
Toss: In a large mixing bowl, combine the king oyster mushrooms, avocado oil, gochugaru (Korean chili powder), furikake seasoning, and salt. Toss thoroughly until the mushrooms are evenly coated with the mixture.

Air Fry: Optionally, line air fryer basket with aluminum foil for easy cleanup. Transfer the seasoned mushrooms to the preheated air fryer basket.
Cook: Air fry for 15 minutes, shaking the basket or tossing the mushrooms gently halfway through the cooking time to ensure even cooking and browning.

Serve: Remove the air-fried mushrooms from the air fryer and transfer them to a serving plate. Serve immediately and enjoy!
