Green beans are such a versatile vegetable and there are so many ways to prepare them that still keep it keto. Roasted, sautéed, steamed. This Keto Smothered Green Beans recipe might be my favorite way to prepare them. The green beans become smoky and sweet, and full of flavor. You can use this as a side dish to lunch or dinner, it’s great for comfort meals, or eat it on its own!
I used frozen green beans, but you can use canned if that’s what you have on hand. Just don’t simmer them as long, they’re much tender than frozen and don’t need the extra time.
Ingredients
- 1lb frozen green beans
- ½ lb. bacon, diced
- 1 small onion, diced
- 5 tablespoons butter
- 1 tablespoon Cajun seasoning, I used Tony’s
- 2 tablespoons stevia (I recommend Pyure)
Directions
If you haven’t already, dice your bacon and onions.
Add the onions and bacon to a medium pan and turn on medium heat. Sauté them for 5-10 minutes until they’re tender.
Add your green beans, 1 tablespoon of butter, cover and turn the heat down to medium-low. Let everything simmer for 15-20 minutes or under the green beans are tender. Check them every 3-4 minutes to stir and make sure they don’t stick.
Once your green beans are tender, add the rest of the butter, sweetener, and Cajun seasoning.
Let everything cook for a few more minutes for the flavors to blend, and salt to taste if necessary.
