Beef Noodle Soup at Qing Yi Se 清一色牛肉麵 in Kaohsiung

If you're wandering around Kaohsiung and craving a big, beefy bowl of comfort, Qing Yi Se (清一色牛肉麵) is one of those spots that looks simple from the outside but delivers a seriously satisfying meal. It's close to Ruifeng Night Market 瑞豐夜市, casual, fast, and very "Taiwan neighborhood noodle shop" in the best way.

About Qing Yi Se (清一色): From Taichung to Kaohsiung

Qing Yi Se (清一色) originally started in Taichung, and most of their locations are still clustered in central and northern Taiwan. They're known for rich, savory broths and their signature "mix-and-match" beef noodle bowls, where you can choose from tendon, brisket, shank, tripe, or go all out and get everything.

The Ruifeng Changsheng shop is the only Qing Yi Se location in Kaohsiung, so if you're in the south and want their style of beef noodle soup, this is your one and only stop.

You'll mostly find their other branches in:

  • Taichung (several locations)
  • Taoyuan
  • Hsinchu
  • New Taipei City
  • Chiayi

All of them have that same quick-service, big-portions, lots-of-condiments vibe, but this Kaohsiung shop has the bonus of being just a short walk from the bustling Ruifeng Night Market.

Atmosphere

When we visited, the place was packed - the kind of bustle that makes you instantly feel like you picked the right spot. Bowls were flying out nonstop, people were squeezing in wherever a table opened up, and you could tell everyone was here for one reason: the food is good.

The energy feels very "local favorite," not touristy at all. It's bright, fast-paced, and a little chaotic in that charming Taiwanese-noodle-shop way. And honestly, with tasty broth, tender beef, free drinks, and unlimited pickles, it's no wonder the place stays full. It's the kind of spot where you sit down hungry, eat happily, and leave already thinking about what to order next time.

What We Ordered

One fun thing about Qing Yi Se is that you can choose your noodles:

  • Thick wheat noodles (chewy and hearty)
  • Thin wheat noodles (classic and slurp-y)
  • Glass noodles (Dong feng 冬粉 aka mung beans noodles, light and silky)

My sister ordered the Signature Tendon & Brisket Beef Noodle Soup - 清一色絕頂牛筋麵(各半:牛筋 + 牛腩肉) - and she chose glass noodles for her bowl. The tendon was soft and melty, and the brisket stayed tender with tons of flavor.

I went for the Four-Treasure Beef Noodle Soup - 大四喜滿漢牛肉麵 - with thick wheat noodles, my favorite for a heartier bite. The toppings included:

  • Beef brisket (牛腩肉)
  • Beef shank (牛腱肉)
  • Honeycomb tripe (蜂巢牛肚)
  • Beef tendon (牛筋)

Four cuts, four textures, all soaking in that rich beefy broth. The shank was my personal favorite - tender, flavorful, and extra satisfying with those thick noodles.

The Broth

The broth hits that perfect spot between rich and easy-drinking: beefy, savory, and warming without being too salty. It's flavorful enough to sip on its own, but not so heavy that it overwhelms the noodles or toppings.

Side Dishes

They also have small side dishes you can order, and we grabbed:

  • Fried oden - crispy on the outside, pillowy inside, great with chili sauce.
  • 龍鬚菜 (dragon whisker vegetables) with peanut sauce - fresh, crunchy, and a nice contrast to the deep beef broth.

Both were tasty and made the meal feel more complete.

Freebies & Condiments

This shop is very generous with the extras. You get:

  • Free bubble tea
  • Free coffee milk tea
  • A full condiment station
  • Unlimited 酸菜 (pickled mustard greens)
  • Unlimited pickled daikon + carrots
  • Chili sauce (spicier than I thought! Try it before you dump a bunch in your noodle soup lol)

The pickled daikon and carrots were especially refreshing - sweet, tangy, crunchy, and perfect for balancing the richness of the noodle soup. I also recommend getting this in case you put way too much hot sauce in your noodle soup haha, it balances it out perfectly!

Overall Thoughts

Tender beef, a tasty broth, great side dishes, and all the free bubble tea and pickles you can handle - Qing Yi Se Beef Noodles is a cozy, satisfying stop for anyone craving Taiwanese beef noodle soup in Kaohsiung. The four-treasure bowl alone is worth the visit, and the location near Ruifeng Night Market makes it an easy detour.
