When it’s warm out, I love lemons! Lemons in my iced tea, fresh squeezed lemonade, and… these Lemon cookies made with Fresh Lemons! I absolutely love how these easy-to-make lemon cookies are made with real ingredients, aren’t too sweet, and have the perfect amount of lemon flavor in them. If you love lemons, this is the perfect treat for you!
Ingredients
- 1/2 cup Coconut Oil, melted
- 1/2 cup Maple Syrup
- 1 teaspoon Vanilla Extract
- 1½ tablespoon Fresh Lemon Juice
- Zest of 2 Large Lemons
- 2 1/2 cups Almond Flour
- 4 tablespoons Coconut Flour
- 1 teaspoon Baking Soda
- 1/4 teaspoon Sea Salt
Instructions
Preheat your oven at 350°F. In a large mixing bowl, mix together the melted coconut oil, maple syrup, lemon zest, lemon juice, and vanilla extract.
Then, add your dry ingredients: almond flour, coconut flour, baking soda and salt. Mix everything together well.
Line a baking sheet with parchment paper or aluminum foil. Scoop out your mix (~1 tbsp of dough) and ball them up in your palm. Place them on the baking sheet and press down. Leave a couple inches between the cookies.
Bake for 15 minutes or until the cookies have lightly browned. Let cool before serving!

Oh – ALSO, this recipe will make about 30 small cookies. So you can share with your family and friends! If so, you can do what I do, wrap it up in some plastic and ribbon it up:

Kind of in the middle. Not really soft, and not a huge amount of crunch.
