How to make Oven Roasted Sugar Snap Peas with Garlic & Sesame (Step by Step)

First, gather your ingredients:
- 1 lb sugar snap peas, trimmed
- 1 ½ tablespoon olive oil (or neutral oil)
- 3 cloves garlic, minced
- ½ teaspoon salt (or to taste)
- 1 teaspoon sesame oil (optional, for finishing)
- 1 tablespoon toasted sesame seeds (optional, added after roasting)
Preheat your oven to 425°F. While it heats, place the sugar snap peas on a baking sheet.
Drizzle the peas with olive oil, then add the minced garlic and salt. Toss everything together until the peas are evenly coated.

Spread the snap peas out into a single layer so they roast properly instead of steaming.
Roast in the oven for about 5 minutes, remove pan from oven and stir.

Return the pan to the oven and roast for another 5 minutes, or until the peas are bright green, lightly blistered, and tender-crisp.
Remove the pan from the oven. If you like, finish with a drizzle of sesame oil for extra flavor, and sprinkle with toasted sesame seeds.

Remove from heat and serve!

Storage & Reheating
Store any leftovers in an airtight container in the refrigerator for up to 3 days.
To reheat, the best method is the oven or air fryer - just a few minutes at 350°F will bring back their crisp texture. If you're in a hurry, you can use the microwave, but the peas will turn softer and lose a bit of crunch.

FAQ
Do I need to trim sugar snap peas before roasting?
It's optional, but trimming makes the peas a bit more tender. To do this, snap off the tough stem end and pull away the string that runs along the side of the pod. Many bagged snap peas come pre-trimmed, but it's worth checking. My mom wouldn't eat them if they weren't trimmed - she insists it makes all the difference!
Can I roast frozen sugar snap peas?
I highly recommend using fresh sugar snap peas - the texture is much better and stays crisp when roasted. If you use frozen, the peas tend to come out softer instead of snappy. But if that's all you've got, thaw them first, pat them really dry to remove excess moisture, and then roast as directed. Just know the texture won't be quite the same… so cross your fingers and hope for the best!
Are sugar snap peas the same as snow peas?
Not quite. Snap peas are plumper, sweeter, and have a crunchy pod, while snow peas are flatter and more delicate. You can roast snow peas too, but they'll cook faster. I prefer using snow peas for stir fries!
Can I make this recipe without sesame oil or seeds?
Absolutely. The sesame oil just adds extra flavor, and the sesame adds extra nuttiness at the end.
