I was super in the mood for some Mexican food the other day, and since I’ve been staying in and not going out to eat (like most of us), I decided I was going to make a Mexican dinner! What’s on the menu? Steak fajitas, pico de gallo, and of course guacamole! Guacamole is actually super easy to make! Here’s how to make my easy homemade guacamole.
By the way, guacamole is super healthy for you! The main ingredient, avocados, are packed with potassium (more than bananas!) and a variety of other B vitamins, too, including thiamine (B1), riboflavin (B2), and niacin (B3). It’s also great for your eyes, brain, and heart health.
The second ingredient, tomatoes, contains Vitamin C, Potassium, Vitamin K1, and Folate. It’s also great for skin health.
Ingredients
- 2 avocados, halved and pitted
- 3 slices of bacon, cooked and crushed in to bits (Skip the bacon to make this dish Vegetarian / Vegan)
- 1 roma tomato, chopped
- 1/3 cup chopped onions
- 2 garlic cloves, minced (or 1 tsp of minced garlic)
- 1/4 cup cilantro, chopped
- Juice of 1 lime (or 2 tbsp of lime juice)
- 1/2 tsp ground cumin
- Salt, as desired
Instructions
First, make sure you prep everything. I start with cooking the bacon. I recommend frying it in the skillet/cast iron because I save that delicious bacon grease for another dish. For example, in this case, I’m making Steak fajitas so that same pan will be used to cook the steak and onions later!
Chop and mince everything you need to – tomato, onions, garlic, cilantro, bacon (I actually just crush these with my hands). Add all these ingredients along with juice of 1 lime, cumin, salt, and avocado in a mixing bowl.
With a fork (best way I’ve found how), mash everything together.
And… you’re done! Easy peasy!
You can eat these with chips or put them in your tacos and fajitas or whatever! I made these specifically to go with my Steak Fajitas.
