Easy Spicy Garlic Lime Chicken – Ya’ll know me, I love me a good easy and delicious recipe, and then when it’s also pretty darn delicious, that is my FAVORITE! This one is one of those dishes. The Garlic Lime combo is perfect for summer time, and summer time it is.
Note about the chicken – I prefer to use Chicken thighs, as I find that it cooks juicier. However, you are welcome to use white meat if that is your preference. (Learn more about white vs. dark meats here.)
Another note about thighs – 1 thigh is about 3 oz. , which apparently is considered 1 serving. Well, I personally eat 2, so I usually count 2 thighs per person, and if there’s more then hey, you have left overs! If you know you for sure eat just 1 thigh per meal, then you do that too.

Ingredients
- Spice Blend:
- 1 teaspoon cayenne pepper
- 1/2 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried parsley
- Salt and pepper as desired
- 4 chicken thighs, boneless and skinless
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 tsp minced garlic
- 2 tablespoons lime juice
Directions
Mix all the spices in the spice blend section together in a separate bowl or plate.
Rub mixture over chicken thighs.
Heat butter and minced garlic in a large skillet over medium heat.
Add chicken thighs with the smooth side down, and let it cook for about 5 minutes, and then flip it to it’s other side. Add olive oil if the pan is too dry.
Squeeze lime juice on chicken thighs. At this point if the pan is too dry, add a little olive oil. Add minced garlic to the pan. Swirl the pan around to make sure the garlicky lime juice is all around the pan and touching the chicken.
Let it cook for another 5 more mins or until thoroughly cooked.
Remove from heat and serve!
