Rice
This Tuna Fried Rice is such an easy dinner idea especially if you have leftover cooked rice. In fact, this is the BEST way to make fried rice. you want to use leftover overnight cooked rice as the rice will be more firm and make it easier to separate and stir fry.
Tuna
I use Wild Planet Canned Tuna for this recipe and it was super easy and worked very well for this recipe. It was funny because I had already bought some of their stuff before from Costco, and then they reached out and asked if I wanted to sample more of their products. I was like, YES. And they sent so many different kinds of products I had no idea they even had! Here’s a peak:
One thing I really liked about the products were if you read the ingredients list, it’s really simple. It’s just tuna, olive oil, for example.
Anyway, while I wrote this recipe with Tuna, you can technically use any other type of fish you may have – salmon, mahi mahi, grouper, cod, etc. If you are using fresh fish, make sure to cook it first and then chop it up for this recipe.
Bacon
Technically the bacon is optional, but come on, adding bacon to everything is delicious! If you choose to skip the bacon, just use cooking oil instead of the bacon grease in the beginning.
Veggies
For the frozen veggies, you can choose your favorite types of frozen veggies! The most common is peas and carrots and corn, however, some mixes will have green beans, or broccoli and cauliflower, and those will also work too.
The only thing to note is if you have larger or chunkier frozen veggies, it may take just a bit longer to heat up when we are cooking them.
You can even use fresh veggies! I have done a mix before too, where I use some frozen veggies, and then I also add in some fresh sliced mushrooms, or fresh chopped onions, for example.
How to cook Tuna Fried Rice
First gather your ingredients:
- 3 slices of bacon
- 1 can (5 oz) tuna, drained
- 2 tsp sesame oil
- 1 cup frozen mixed veggies (corn, peas, carrots, etc.)
- 2 cups of cooked rice
- 3 cloves of garlic, minced
- Cooking oil, as needed
- 2 eggs, beaten
- 3 tbsp soy sauce
- Salt to taste
- White pepper to taste
- Green onions, chopped
Place bacon in large wok or skillet. Cook the bacon on low heat, flipping occasionally to cook evenly. When bacon is crisped to your liking, transfer to paper towels to drain, leaving the grease in the wok / skillet. Cut in to bite sized pieces.
Add mixed veggies in to wok and cook for about 2 minutes, or until vegetables begin to soften, stirring occasionally. Then, add in tuna, and break apart with a spatula and mix well with veggies.
Move tuna and vegetables to one side of the skillet. If the pan is dry go ahead and add a little oil. Then add the beaten eggs to the other side, and stir it to scramble.
Add bacon, garlic, rice, soy sauce, sesame oil, and salt to taste, and stir fry everything to blend together. Add salt and white pepper to taste.
Sprinkle chopped green onions on top (optional), remove from heat and serve!
